Happy Friday! 🙂
I’ve drained all the energy out of my system today, and I’m finally sitting down to have my evening cup of coffee. Kyle and I are trying to decide between a movie and dinner or staying home and cooking. While I have this time to myself, I’ve decided to throw together a recap of my week! I was exhausted from all the traveling, so I spent a lot of time at home, working around the house, and going on long walks! It’s been the perfect week so far. I don’t have any crazy plans for the weekend, but I foresee a lot of walking and home DIY projects.
My new coffee grinder finally came yesterday, and I was so excited to use it. While I was visiting the Sunshower Coffee Farm (blogging my experience soon), I learned some pretty crazy facts about ground coffee. It’s the spam of coffee beans. Defaulted beans are usually ground up, and the consumers can’t tell the difference. When you buy whole beans, you know you’re getting quality coffee. When I heard that, I immediately bought a coffee grinder! My cup of coffee couldn’t have been any more perfect this morning. I sat by the window with my dogs by my side, reading my book, and it keeps sucking me in.
Before I went crazy doing my Friday cleaning routine, I walked the dogs and made breakfast. My cleaning routine could be considered a workout. I had a hard boiled egg, farmers market blueberries, and Dave’s Killer 21 Grain bread with crunchy roasted peanut butter.
As soon as I finished putting the freshly washed bedding back, the pups decided they’d jump all over it. Thank goodness they don’t shed. They are too cute to get mad at. They like to sit upstairs in my room and watch over the neighborhood.
After three hours of cleaning, I had a quick bite to eat before meeting up with my mom to go for a long walk. I’m having so much fun fitting in my miles for the 150 June Walking Challenge!
I mixed together apple slices with superfood granola from Oat Box and vanilla Siggis yogurt. So delicious and perfect before the trails.
We walked three miles down the Riverwalk and three miles back. I need to remember to bring water because I was so dehydrated by the end of it. This summer heat arrived early.
When I got back, I had a sweet treat, coffee, and plopped on the couch to bring you this blog post! Remember the carb-less chocolate I made the other night? I made a new version without the peanut butter, added toasted coconut, sprinkles, vanilla, almond extract, and cinnamon! Soooo good.
So let’s go back to last Friday. I was exhausted after spending fourteen hours traveling and taking the red eye from Hawaii. I was ready to get home and crawl straight into bed. I landed in Charlotte at 5 pm, had a big bowl of popcorn with Kyle and the pups on the couch, and fell asleep at 8:30 pm. I didn’t wake up until 9:45 am the next morning, and that NEVER happens. I think it helped me beat jetlag a bit faster.
I missed the dogs so much. I took Grumples on a walk in the neighborhood and then took Leo to the Riverwalk. Grumples likes to go two miles, but he’s done after that when it’s hot out. The neighborhood is perfect for him. Leo can go a little longer, so we walked 3.7 miles.
I made a salad for lunch. It had spinach, arugula, kale, avocado, goat cheese, blueberries, pita chips, and raspberry vinaigrette.
Later Saturday afternoon, Kyle and I made a Target trip (our fave.) I picked up some flags to put in the yard for Memorial Day and a new summer doormat. How cute is that? 🙂
For dinner, we made roasted sweet potatoes, brussels sprouts, and homemade chicken nuggets.
I hadn’t seen Becca in a while since I was traveling, so I headed to Waxhaw to go on a walk and grab coffee with her.
We stopped at Crossroads Coffee House. It’s been one of my favorite spots for the past four years.
We walked the back neighborhoods in Waxhaw for about three miles. It’s the perfect spot to see adorable southern homes full of charm and character.
We stopped at some of the home boutiques and antique shops while we walked the town. I ended up buying a few things for the house.
When I got home, I made another salad for lunch. This salad had avocado, kale, arugula, spinach, blueberries, goat cheese, cucumber, and leftover homemade chicken nuggets.
On Sunday night, I made the carb-less chocolates 🙂
I’m excited to share Sunday night’s dinner recipe with you soon. I made my enchilada recipe but with bell peppers and I think this is one of my favorite meals I’ve ever made. 🙂 They were perfect for food prep too.
Sunday morning boys 🙂 Grumples laid his head on Leo’s arm, and they sat like that for a good five minutes. Leo didn’t want to leave because he had a bone in his mouth.
I headed over to my parents to spend some time with them on Memorial day. We spent some time swimming and playing with the dogs in the yard.
When I left my parents, Kyle and I headed to the gym. I did a little 45-minute circuit that I pulled from one of the fitness challenge pages.
Nothing better than an empty gym 🙂
I had leftover enchilada bell peppers and chicken nuggets for dinner after walking the pups. We spent the rest of the night watching The Bachelorette. It’s been an interesting season so far, but I’ll share my opinion and recap as the show goes on.

I was excited to try my Oat Box granola with my yogurt 🙂 The box was waiting for me when I got home from my trip. It’s a subscription service that sends you two bags of granola a month, and they are pretty tasty!
These aren’t filled with anything artificial, and they are the perfect addition to a breakfast. You can read more about Oat Box here 🙂 I really loved the natural taste and lightness of the oats. The superfoods granola was my favorite. I loved the little goji berries.
Grumples and I headed out for a really long walk on Wednesday afternoon. I’m trying to make up for the twelve days away from them.
My dad came over Wednesday afternoon to help me hang the new mirrors that I bought at Farmhouse Roots in Waxhaw.
I’m still on the hunt for a new living room rug and cozy reading chair to go by the fireplace. When everything is done in the house, I’ll post all the before and afters!
I sat down to answer blog comments Wednesday afternoon, watched the House of Cards, and had some snacks:) Cucumber, carrots, and supremely spicy hummus!
I was happy with how well the mirrors pulled the room together. The evening sunlight shining through made me so happy. It’s finally feeling like my home.
For dinner, I made an omelet and brussels sprouts. The omelet had 1 egg, 5 egg whites, kale, spinach roasted garlic, goat cheese, and black pepper!
I was so excited to start the 150 Mile June Walking Challenge on Thursday!! I started the morning off with 2.5 miles with the dogs.
They were zonked.
Breakfast: blueberries, Greek yogurt, and Oat Box granola.
I did another three miles in the afternoon. I took Leo 1.5 and Grumples 1.5. It’s too hot for them to do the full three miles.
Late lunch: I had Amy’s organic tomato soup with cheese and croutons.
The flowers I planted a couple of months ago are growing so fast!
I decided to spend some time painting on Thursday afternoon.
When I took this picture, it gave me inspiration for my painting. I loved the simplicity of the trees, ocean, sand, and sky.
I am a sucker for sparkles, so I added shimmer on my gloss coat.
I am going to add it to my beach themed bathroom.
For dinner, I had an omelet, cherries, and avocado! Parent Trap was on, so the pups and I curled up on the couch and watched it. 🙂

Granola is one of my favorite foods ever – Oat Box is such a good idea!
We don’t watch the Bachelor (Ben and I basically just binge out on the Food Network) but I might have to pick up House of Cards with my extra time this summer!
Our weekend will probably be our usual – a coffee shop date/work session (one of our favorite parts of the week!), some sun, and hopefully a brunch together!

Another great post! I don’t know if I’ll get quite 150 miles this month, but I am doing the challenge and out there walking as much as I can (I live in Raleigh, so I hear you about the crazy heat and dehydration). This weekend for me is all about the relaxing…i went to the pool already, I got to read some and there is a Renaissance Fair at the Art Museum tomorrow that we are going to attend. We are also definitely catching House of Cards this weekend! Looking over your post inspired me to make your homemade chicken nuggets, sweet potato fries and roasted brussel sprouts for the occasion.
I’m sure the pups and Kyle are excited that you are back home with them. I don’t live far away from the Charlotte area, I really need to check out Waxhaw sometime, it just looks so beautiful in your pictures and I also love antique shopping. I also wanted to say that your paintings are very beautiful…you have a real talent for it. I love your recap posts and am already looking forward to the next one!

1. I am attempting to do the June Walking Challenge! I live in south Florida and we literally only had one rainy day the entire winter… and of course it started raining the day you started the challenge and is supposed to continue at least until the 12th! It never fails right? LOL Luckily I walk a lot at work so I’m trying to keep up with it indoors!
2. I’m not up to much this weekend because of the rain, but we definitely need it so that’s one positive. I went to breakfast this morning at a new restaurant, played with my doodle (Moose) for awhile, and started watching The Keepers on Netflix. It’s a true crime docuseries that’s pretty good so far! Tomorrow I’m going to see Wonder Woman with my dad… I usually don’t like going to the movies but he wants to see it and my mom refuses lol!
3. I haven’t watched either series. I hear a lot of good things about House of Cards but I usually avoid political shows… is it worth a watch?
Rain can be so annoying and so therapeutic at the same time. HOW!?
OHHHH i may have to look into The Keepers! That’ll be a fun daughter dad date!!

This weekend Is a long weekend, so going to fit in as much as possible, visit my nana, then do a mini road trip to the snow with my family (yearly tradition) and get in my 5 miles each day for the June walking challenge.
I made my father the carb-less chocolate with raspberrys as he’s diabetic and he loves it!

1- Not yet, but I am having surgery this summer and won’t be able to continue with my lifting/strength training routine for a few months. The walking challenge may be just what I need!
2- It’s Mr. Grape Pairing’s birthday today! We are celebrating by having board game competitions and going to eat sushi tonight!
3- Not a Bachelorette fan, and I gave up on House of Cards in Season 3. It was so good, and then it lost it’s magic…

I usually don’t calculate any calories, but my runkeeper does keep track of them if I want it to. I only use runkeeper to track my miles!:) xo

Love the food pictures– they’re so inspiring!! Probably going to see if I can make some meatless stuffed peppers tonight (and try making them enchilada ones like those!), my boyfriend has been asking for them for, uh, weeks… whoops. 🙂 I walk 3 miles at lunch every day, so I’m trying my best this month to get 15,000 steps (about 7 miles) a day. It keeps me sane!
I haven’t gotten back into HOC just yet, but I’m getting there! How’s the new season? This weekend, I went up to visit my family in CT and spent a bunch of time power cleaning and walking their half yellow lab/half great pyrenees, who’s about 110 lbs… so maybe I should say he walked ME, lol.

Not planning on to be honest. My life is pretty busy at the moment so I stick to more intense workouts like running in order to invest a little less time. But I enjoy walking 70min to work every now and then 🙂

Hey Taralynn! I LOVE your blog, you are such an inspiration! I have been reading it for over 5 years! This may be an odd question, but how do you keep your avocados so green? I LOVE avocado but I generally don’t eat the whole thing and then the rest of it turns brown 🙁 I just can’t bring myself to eat them when they get too brown and I feel like I waste them!
I put them in the refrigerator asap! I also keep them attached to the seed and in the skin! When I take them out, I’ll cut the brown part off!
