I stopped over at Whole Foods and picked up mini chocolate chips, 365 Organic Brown Rice Crisps, Elyon Gluten Free Natural Vanilla Marshmallows.

4-Ingredient 60 Calorie Brown Rice Crispy Treats

A low calorie treat! Healthy and delicious on the go snack.

Ingredients
  

  • 2 Tbsps. Unsalted Butter (or coconut oil)
  • 3 Tbsps. Mini Chocolate Chips
  • 1 Bag Mini Elyon Marshmallows
  • 6 Cups Brown Rice Crisp Cereal

Instructions
 

  • In a large pan on medium-high heat, melt the butter, and add marshmallows.
  • Pour the six cups of crisps into the pot with the melted marshmallows.
  • Transfer them over to a pan.
  • Wet the back of a spoon and spread the treats evenly.
  • Sprinkle the chocolate chips on top.
  • Wet the spoon again and spread/press the chocolate chips into the treats.

I was so impressed with how well these turned out. I wasn’t too sure about using a different brand of marshmallows, but these totally did the trick.60 Calorie Brown Rice Crisps With Mini Chocolate Chips

This is a great health(ier) treat to bring into the office, for a classroom, or for the holidays. I want to make these for Halloween with little candy corn pieces on top. They are gluten-free which is nice for people who can’t have it.60 Calorie Brown Rice Crisps With Mini Chocolate Chips

    1. I’ll have to go check the exact size on the pan (whoops for me not mentioning) I didn’t use pam but you can to be safe!

  6. Made these yesterday—OMG. melted the chocolate down instead of the chips so I could get chocolate in every bite. Even my husband loved these. (Slowly bringing him to the homemade side.)

  12. I made these and they were fantastic! I wanted to share another brand of the natural marshmallows I found at Whole Food. The Elyon are great but for those who don’t want any gelatin (The Elyon use fish gelatin) I found a brand called Dandies that are actually vegan and use a type of seaweed base instead of the gelatin. I haven’t actually used them yet but wanted to share!

    I’ll let you know how they turn out!!!

    BTW the coconut oil works amazing!
