Right now, I am operation Fall. It’s officially September, so I think it’s safe to start celebrating. Right?
I just finished watching the first college football game of the year, and I’m eagerly waiting for more. Go Hawkeyes! I’m contemplating a trip home this year for an Iowa Hawkeyes football game. It’s been way too long since I’ve been home, almost over three years. Iowa is beautiful in the fall; it’s one of the things I miss most. The trees are red and bright orange, the air smells like a bonfire, and there’s nothing like roasting sweet corn over a late-night fire. And don’t get me started on the juicy fried breaded tenderloin! You know, those tenderloins that are 10x bigger than the bun!
While I was on a walk yesterday, I noticed one little tree that stood out from the rest. It was yellow and orange…was that a sign Fall is getting near?
For dinner, I made breakfast. I do this a lot because it’s quick to whip up and my favorite meal of the day. I made fluffy scrambled eggs (2 eggs, garlic, salt, pepper) crispy potato hash (hash browns, shredded cheese, garlic, salt, pepper, olive oil) whole-grain waffle with syrup, and turkey bacon.
After dinner, it was time to make some pumpkin fruit leather!
Cook it in the oven for 3 to 4 hours.
