Last Night’s Dinner: Grilled Chicken, Tomato & Mozzarella Salad!

I forgot to post yesterday’s dinner and so here it is!

I had grilled teriyaki chicken, salad with balsamic dressing, baked  beans, mozzarella & tomato salad, and a red baked potato. I love how colorful the plate is! I never used to be a tomato fan but I’ve really created a taste and a love for the fruit!

Teriyaki chicken: 2 tbsp organic teriyaki marinade, salt, pepper, and olive oil for marinating.

Salad Dressing:1/4 cup olive oil, 1/8 cup Balsamic Vinegar of Modena, 3 tablespoons honey, 1/2 tablespoon garlic powder, pink of sea salt, 1 teaspoon of italian seasonings

Tomato & Mozzarella Salad: 1/2 large tomato sliced, fresh sliced mozzarella cheese, dried basil, and my balsamic salad dressing listed above. You could also chop up the mozzarella,  tomato and spread it on a bruschetta cracker!

& Good news!

I was put at ease. Unfortunately I am going to miss the first and second day activities in the Dominican but I will get there Friday. Better late than never.

  6. Hey! Wasn’t sure where to leave this, but like me you seem to have a sweet tooth and I love when I find new healthier delicious desert ideas! Just wanted to throw one your way. Tonight I tried 1 tablespoon of dark chocolate chips melted just slightly in them microwave, topped with half or full sliced banana, cinnamon, and optional — whipped cream (I have an unhealthy love for whipped cream). Even with the whipped cream it’s about 140 calories and I get to have my chocolate fix!
