Wednesday Salad: Bourbon Chicken, Avocado…

Last night, I had a medium sized salad with a bowl of tomato bisque soup. Soup and salad always go well together. The salad was super simple.

Ingredients: 1 hard boiled egg, serving of croutons, 4 cups lettuce, 1 chicken breast (bourbon recipe), 1/4 cup cottage cheese, 1/2 small avocado, 1/4 sweet potato baked and seasoned. I used a light Italian for the dressing.

I couldn’t resist sharing this photo. Grumples and bear were playing at the park, and he took a roll in the dirt. He was half brown and half white when we left! Of course he had a bath. Look at that guilt-your-owner face…

  1. That looks so yummy… I must try this. Too bad I can´t eat avocados. I love them, but my stomach does not. *sigh*
    To keep the creaminess of avocado, I replace them with pureed peas. 🙂

    Bahahaha, Grumples! I´m so glad that my big boy is black. He loves rolling around in everything. He prefered puddles when he was younger.
    My little boy has Grumples color and hates dirt. Might be ´cause he hates getting a bath. hehe
