I had a great Saturday! Jeremy had the day off so we spent it together. We decided to end our evening at the driving range and on a dinner date. Unfortunately later in the evening I was incredibly sick and went to bed at 8, but at least I had a great day!We have been trying to get as much practice in before we go golfing next week. I’m always rusty after a golf-less winter. I’m pretty proud of my shots, only about three yards short on my drives compared to last year, but I’ll pick it back up!
Jeremy and I love crab wontons! We have no self control over them ,so we only ordered two! The wontons were stuffed with crab, cream cheese, scallions, and bell peppers. I like to make a healthy version when we cook at home! (My crab wonton recipe)
They had a new side on their menu, ginger orange edamame. It sounded scrumptious, so I ordered us a side. It consisted of steamed soybeans, orange peel, ginger, garlic and sea salt. These would be easy to make at home!
I ordered the traditional chicken lettuce wraps on the lighter menu. Pei Wei has a ton of healthy options. They have a little sign that says they’ll customize any meal to fit your healthy lifestyle. I thought that was neat. They also have a gluten free menu. My lettuce wraps came with scallions, garlic, soy sauce, water chestnuts, rice sticks and iceberg lettuce. I asked for no mushroom. I also asked them to use low sodium soy and they did! I could live off of these lettuce wraps! Now, I need to create a copy cat recipe!
