Family Time In Iowa

I decided to spend some extra time in Iowa while I had the chance. I’m glad I did. I had a wonderful time with my family and so did Mr. Grumples.

Grumples and I have been on some light runs and lots of walks. I’m still going easy on my foot for a while. The pain in the back is almost unbearable with shoes on. My laces are basically untied while I run.

This weekend, I helped my parents get the house ready for their move.  They’re moving all the way to Florida! First, they have to sell the house and that’s where I helped them out!

I took some of the pictures off the wall, scrubbed and shined the floors, and staged the house for a photo shoot for their listing. It took my mom and I about four hours, but it was a fun spring cleaning project.

After all of the cleaning, I prepared my minestrone soup for the family and we enjoyed it while watching the Iowa State game.

For dessert, I had a minty frozen treat! I blended together 1 cup of unsweetened almond milk, 1 tbsp of vanilla protein powder, 1 cup of ice, 1/2 cup of spinach, 2 tablespoons dark chocolate chips, 1 packet stevia, 1/2 tsp dried mint leaves, and 1/2 tsp of vanilla extract. After blending, I let it chill in the freezer for a couple hours. After taking it back out of the freezer, I added it back to the blender with 1/2 cup of unsweetened almond milk. I put it back in the freezer for 10 minutes to give it an ice cream texture!

I have more meals and recipes to post, but need to get busy packing the rest of my things for the road! I’m breaking my trip up into several days. I can’t to explore South Carolina!
