Not everyone is a fan of leftovers. I prefer them. To me, food taste better the next day. Especially pizza for breakfast! If you have a hard time eating leftovers or live with someone who does, try turning them into different meals. You’d be surprised what a little disguising can do.

What I liked about this dish is that it made a lot. I enjoyed the dish throughout the week and it continued to get better as it marinated in the spicy sauce.
I took the leftover dish and stuffed it in a pepper to bring the meal back to life. Stuffing peppers with leftover dishes works for a lot of different meals. You can stuff peppers with leftover lasagna, tacos, or macaroni and cheese. Your “no leftover” eaters may not notice. Just don’t stuff it with your leftover peanut butter and jelly sandwiches. Throwing away leftovers can get expensive. Especially if you are the only one eating them because they can go bad fast. So this is a great money saver!
I mixed together a 1 1/2 cups of steamed and seasoned zucchini slices with three cups of the baked casserole.
If you are a cheese lover, mix a little cheese in with the zucchini slices.
Bring a pot of water to a boil and add three de-seeded bell peppers. You can use any color pepper but I like the sweetness of the red. The orange are a favorite of mine as well.
Stuff three large bell peppers with a cup an a half of the mixture and top them with shredded Mexican cheese.
Bake for 20 – 22 minutes at 350 degrees.
I served the pepper on a plate with avocado, spicy red chili sauce, ginger sesame dressing and walnuts.
Just make sure to be safe when it comes to your leftovers. Keep them in closed containers in the refrigerator and don’t let them sit out for too long. They can form a harmful bacteria on top if they sit in a 40 degrees plus temperature. It’s important to refrigerate meat or dairy products immediately, too. Smell them to make sure they have not spoiled. I follow a three to four day shelf life with leftovers.
