Sometimes having breakfast omelets on Sunday nights is the way to go! They’re quick, easy to clean up, and filling. We are usually low on groceries on Sunday, but always have ingredients for omelets! It’s a great way to use up older produce and the last of the eggs before hitting the store on Monday.
In a frying pan, saute vegetables with a couple tablespoons of olive oil. I use onions and peppers. You can use all kinds of vegetables!
Crack an egg into a greased frying pan and cook one side of the omelet half way through before adding the filling. Cover for a minute and then fold over.
I stuffed mine with vegetables, tomato, veggie burger, goveggie cheese, and avocado.
I filled Jeremy’s with vegetables, cheese, bacon, tomato, avocado, and mushrooms.
We also had a bowl of Amy’s low in sodium minestrone soup!
