Cinco De Mayo is finally here!
I love an excuse to dance around the kitchen while cooking: fresh, flavorful, and light Mexican food. My recipes may not compare to a true Mexican chef, but they are still worth every second on the lips.
In honor of Cinco de Mayo, I put together a list of my favorite Mexican style recipes. With a little American spin-off, these recipes are healthy and a great choice for your Fiesta!
I may be in the south, but tonight, Jeremy and I are going to celebrate Cinco de Mayo with a backyard fiesta! Our menu includes: a giant fajita salad, sweet potato oles, cinnamon apple tortilla chips, and coconut oil fried bananas!
