Kale, the one lettuce I hardly eat. I love it baked and turned into chips, but sometimes eating it as a main leaf in salads is difficult. I can’t get past the “garnish” feel. I keep hearing so many great benefits kale has, so I really want to try harder to like it.
Yesterday was my first attempt.
To give the kale a better flavor, I tossed it in a bowl with one tbsp low sodium vegetable broth and a half tbsp of minced garlic. I let it marinate for about an hour.
I chopped up a small summer squash and a half of an orange bell pepper to add more flavor variety. To give the salad more texture and nutrients, I added a fourth cup of unsalted garbanzo beans and one tbsp of Chia seeds. Whole Food’s whole grain croutons are my favorite, so I threw about two tbsps on top.
My Greek yogurt dressing consisted of three tbsps plain non-fat Greek Yogurt, 1 tbsp fresh lime juice, one tsp garlic powder and a half tsp onion powder.
This salad overall allowed me to enjoy kale much better. I can’t imagine it would allow my boyfriend to enjoy my breath afterwards. Too much information?…okay I’ll stop there.
