Super Bowl of Salad : My Kind of Game Day Grub!

I’ve prepared myself for the “why don’t you splurge” comments. I get asked that a lot, more lately. I explained my reason during my “birthday cupcake” post.

Today is about football, not the food.

Jeremy and I are new to Georgia. We don’t know anyone here. Instead of going out to Superbowl parties, we are going to be win a billion tickets at Dave And Busters. Isn’t that what the cool kids do?

I don’t want to go on an empty stomach tonight, so I prepared a large salad. Sure, I’ll snack on a few appetizers, but I don’t want to make those appetizers my meal. I wanted to fit in some healthy nutrients to repair my body after my workout today.

5 Cups Mixed Salad Greens
1/4 Cup Unsalted Chickpeas
1 Tbsp Blueberries
2 Tbsp Sliced Almonds
1/2 Cup Low-Fat Organic Cottage Cheese
1 Serving Whole Grain Croutons
1 Serving Sweet n Spicy Peppers
