On the seventh day of Christmas my true love gave to me….skinny scotcharoos.
Today I had to make scotcharoos for Jeremy’s boss for Christmas. I went all out and added the Christmas colored M&M’s and boxed them up all fancy. Then I had an idea, why not a lighter version? There is no need for all of that sugar and corn syrup in one treat. It just erases everything I accomplish in the gym. I searched through my cabinets grabbing everything healthy in site and went at it.
Above is the batch I made for Jeremy’s boss…. approximately 400 calories a slice!
Ingredients:
3 Cups Gluten Free Whole Grain Rice Krispies
3 Tbsp Dark Chocolate Chips
4 Tbsp PB2 Powdered Peanut Butter
1/2 Medium Extra Ripe Banana Mashed
3 Tbsp Butterscotch Baking Chips
2 Packets Truvia
1 Tbsp Honey
2 Tbsp Ground Flax Seed
1 Tsp Chia Seeds
1 Tbsp Chocolate Protein Powder
- In a large mixing bowl add: powdered peanut butter, mashed banana, Truvia, flax seeds, chia seeds,honey, protein powder and mix until creamy.
- Add Rice Krispies to the mixing bowl and combine.
- In a microwave safe bowl, melt chocolate chips and butterscotch chips together.
- Add melted chocolate to mixing bowl and combine with other ingredients.
- Pour scotcharoos into a pan, flatten with a spatula.
- Let cool for 20-30 minutes.

Well swans are beautiful, but where in the world am I going to put them? They are also viscous, don’t let their beauty fool you. I know all about them. When I was five and helpless, I sat and watched my mom get chased by a swan up at uncle donny’s lake house. My dad was too busy to save her because he was filming the whole thing. I don’t need to reenact that, especially not with seven of them.
I think I’ll send them back to the pond and bake up some scotcharoos to bring my mother. They are her favorite. Looking back on the time I sat there doing nothing to save her…she deserves some scotcharoos. Now…only 20 hours to drive until I get to her.
