Do you ever have nights when you are low on groceries, yet too lazy to head to the store? I have those nights a lot. I usually don’t blog my random meals on those nights, but I figured some people could relate. Tonight after spending the entire day walking around downtown Atlanta, I had one of those nights. We headed downstairs to cook up some dinner, but had o improvise with what we had in the house. We had a bag of romaine lettuce that was about two days from going bad, so we used it. On the lettuce, we added low fat cottage cheese, shrimp, croutons and light honey mustard.
The second random fix has no name. I guess you could call it the “stir-fry scramble.” On a heated skillet we added: 1 bag of frozen stir fry vegetables, 1 can corn, 3 egg whites, 1 tbsp hot sauce and a pinch of pepper. It looked awful. I was nervous to try it, but it tasted pretty good. Guys are usually good at fixing up random masterpieces. We also had brown rice with our “stir-fry scramble”. I’m sure some of you can relate when it comes to improvised meals. Tomorrow, I plan on making a long trip to the grocery store. I’m thinking salmon.
