Some days, I like to snack for no reason. Maybe it’s out of boredom, but these are the days I get creative when it comes to low calorie snacks. Yesterday, I posted a with Greek yogurt fiesta dip. After eating the tortilla chips, I wanted more. Instead of baking more tortillas, I baked zucchini chips. Zucchini has very few calories, few carbs and no sugar. I could eat as many as I wanted. I am going to bake a bowl of these for the super bowl this year to eat with dips!
-Preheat oven to 200 degrees.
-Cut zucchini into 1 cm slices. Not all of them will be 1 cm, but as long as they are thin, they will work.
-Spray baking sheet with cooking spray.
-Spread zucchini out on baking sheet.
-Sprinkle fiesta seasoning over the top of zucchini.
-Bake 3 hours.
-Let dry for 1 hour after removing from oven.
