Summer has so many parties and BBQ’s. When you are trying to stay healthy they can really be a disaster. I don’t like to set myself up for dealing with unhealthy options so I take control and make my own dishes for the grill.
A lot of people overlook vegetables when it comes to the grill. Most people stick to meat, meat and more meat. I want my sides to taste just as grilled as my entrees. Grilled vegetables are appetizing and very filling. The more grilled vegetables you eat the less potato salad or coleslaw you will dig into.
My favorite grilled sides:
- Zucchini
- Onions
- Asparagus
- Squash
- Potatoes
- Corn
- Bell Pepper
Instead of red meat go for grilled chicken, shrimp or fish. Above I chose Salmon with a low sodium Teriyaki sauce, brown sugar, pepper, and lime.
When you grill up the vegetables mix them together for a side.
Cook the Asparagus Separate or it will break apart with the vegetables.
My parents sent me up some IOWA sweet corn. THE BEST grilled thing ever!
When you eat as healthy as this at a barbecue you don’t have to skimp out on the dessert or worry about fitting into your jeans tomorrow! Have a great fourth!
