60 Calorie Apple Pie Muffins

9 Servings: 60 Calories, 12g Carbs, 5g Fiber, 4g Protein, 0g Fat

Ingredients:

  • 1  Cup No Sugar Added Apple Pie Filling
  • 1/2 Cup Unsweetened Applesauce
  • 3 Medium Egg Whites
  • 1 Cup Whole Wheat Flour
  • 1 Cup Stevia 
  • 1 Tsp Baking Soda
  • 3/4 Cup Rolled Oats
  • 1 Tbsp Ground Cinnamon
  • 1 Tsp Ground Nutmeg
  • 1 Tsp Vanilla

Directions :

  1. Preheat oven to 350
  2. In an a electric mixer mix eggs, pie filling, vanilla and apple sauce together until smooth.
  3. Slowly add in dry ingredients and mix until smooth.
  4. Place liners in a muffin pan.
  5. Scoop 1/3 cup of batter into each muffin liner.
  6. Bake for 15-20 minutes or until the toothpick comes out clean.

    I want to make this recipe but I don’t use stevia, how much sugar would equal the amount in this recipe?? I really want to make the muffins tonight and Google can’t seem to help me!

    She is using “cup-for-cup” stevia so it would be equal to the same amount of sugar. So you would need one cup of sugar (however I personally wouldn’t add that much).

  3. I was a little worried about making these muffins because it was hard to believe that a muffin with such low calories would taste any good… BUT these muffins were amazing!!!!! They will definitely be a keeper! I got 9 large sized muffins from this recipe and they are quite filling! Even my mom says that these are the best muffins I have made with stevia… My only question is how you found that these were 60 calories? I plugged the recipe into calorie count and found that they had 90.. But it doesn’t matter because these muffins are so good! I am going to try mixing in the leftover apple pie filling with my oatmeal!

  4. A whole cup of Stevia sounds like a lot to me! Could I use 1/2 Stevia and 1/2 Sugar? I realize it would make the calorie count a little higher.
