Sorry it took so long for me to upload my lunch! I have had a crazy day and am finally getting a chance to relax. Last night I didn’t get back into town until 3am and had to wake up at 5:30am for work! That is so unhealthy and I really felt it today. I fought to keep my eyes open, my body craved sugar to stay energized, and I had a piercing head ache. I made sure to drink tons and tons of water and now I’m already in bed about to snooze off. For lunch today I made sure it was full of energy and healthy foods. On the bottom I prepared a little salad with spinach, cucumber, blueberries, cherry tomatoes, feta, broccoli and almonds. The top right is plain Chobani and of course I’m on a Mio kick so I had some in my purse to add to my yogurt. There is a tiny pear slice next to the yogurt, I had to fit it in there somewhere. The top left is a little wrap with tofurky (vegetarian turkey), american slice cheese, spinach, 50 calorie whole grain tortilla, and cherry tomatoes rolled up and sliced. This lunch definitely gave me energy for a while, but it’s sleep that will cure my fatigue.
You added Mio to your yogurt? I’ve never heard of that before!
