I have so many things to do today so I wanted to make sure my lunch was healthy and filling! The top left is my dried fruit for the day! A couple pieces of dried pineapple, papaya, and kiwi. Last night was the first time I tried dried kiwi and I was surprised of how sweet and delicious it was. The top right is a couple chunks of watermelon, low fat cottage cheese, and grapes. On the bottom are 2 mini shrimp tacos. I found mini tortillas that are only 50 calories a piece for the taco shell. I steamed the shrimp and added a little Cajun seasoning. I chopped 1/4 tomato up with 1 tbsp red onion and 1 tsp of cilantro to add to the taco. I added regular mixed salad to the bottom and drizzled a tiny bit of south western dressing on top. In the bottom corner to the right are chopped green peppers.
