Good Morning!
Is it just me? Or has this week been a slow one? It may be that I don’t have anything to plan or train for, and I’m kind of OK with that! For some reason, Leo wanted to get up at 5 AM this morning, so here I am. Since it’s going to be 87 degrees today, I’m going to be doing major closet rehab. I need to bring all the summer clothes out of the guest closet, transfer them to my closet, and put all the winter clothes in the guest closet. It may be an all day process, but it seriously needs to happen. It’ll make my packing for Hawaii much easier this weekend. I’ve been putting it off all month.
Before I get to my closet (doing everything I can to put it off), I’ve decided to post a little recap.
I felt much better waking up Tuesday morning. I could finally move my legs properly, and the pain from the run was easing up. I was nervous thinking that I wouldn’t be able to walk the dogs, or even drive, but it seemed like the runner’s knee took its course, and it was all uphill from here.
I had to catch up on so much Tuesday, so I made coffee, sat with my bouquet from Kyle (<–girl’s please read), and got to work!
I hadn’t seen Becca in weeks because of our schedules, so we met up Tuesday night for salads in the park!
When she got off work, we picked up salads from Chopt and took them to Freedom park to catch up. My salad had kale, onions, butternut squash, quinoa, cranberries, goat cheese, egg, avocado, grilled chicken, falafel, and cucumber. I had their balsamic dressing on the side.
I spent all Wednesday working on my New Jersey post! For breakfast, I made a Greek yogurt bowl. It had blueberry Greek yogurt, blueberries, chia seeds, flax seeds and honey. I went to the gym Wednesday to do weights and stayed far away from cardio.
I headed out to see my parents after the gym, and tell them all about my NYC trip. We sat around the pool and it was nice catching up! The dogs loved running around like maniacs in the backyard!
For dinner, my mom made fajitas. I just added the grilled chicken, steak, peppers, and onions on top of a salad with a sprinkle of cheese, Spanish rice, tomatoes, and sour cream. I will be posting the recipe for my cast iron fajitas soon. I have them in my recipe folder!
After the gym on Thursday, I made frittatas and butternut squash for dinner! You can find the recipe here.
All I did at the gym was lift weights, leg raises, and ab work. I’m trying to focus on strength training only.
On Friday afternoon, Becca and I met up for coffee and crafts. I had a little project I wanted to work on, so we went to Central Coffee Co. I ordered a small nonfat cappuccino with an extra shot of espresso and vegan zucchini bread. You can’t go there without ordering it! It’s the best!
We stopped at the Saurez bakery for some treats, and I found this Cinco De Mayo cookie! I had to get it.
Later Friday night, I walked down to a neighborhood Cinco De Mayo party to meet up with Meighan. I took Leo with me and he was a hit with all the ladies!
Kyle and I had dinner and wine at the Capitol Grille later Friday night. I ordered a kale salad and grilled chicken on top.
We took the pups to the dog park early Saturday morning! It’s our new favorite thing to do on weekends. The boys run and run! They are so energetic, so it’s nice for them to get it all out of their systems.
Leo had his first groom on Saturday afternoon! We used Aussie Mobile grooming. It’s great because they come right to your house, and groom your dog in a little over an hour.

Kyle had the idea of making a buffalo chicken & blue cheese frittata. I decided to give it a shot, and now he’s obsessed. I will post the recipe soon! I can’t stand blue cheese or buffalo sauce, so you will only get the opinions of Kyle and Steve! They want me to make it again, so I guess it was pretty good!
I made another baked frittata, but a little more my style. It had eggs, sweet potato, spinach, and goat cheese. I’ll post that full recipe soon too!
It’s hard for me to take naps, but I was SO EXHAUSTED. One minute I was rubbing Grumples belly and the next minute I was sound asleep. This is a screenshot I saved from Kyle’s Snapchat. 🙂 Love my boys!
On Saturday evening, Kyle and I went to TJMaxx to get new dog toys for the pups. Can you tell we are obsessed with our dogs? They go through toys so fast, so we wanted to get fun ones for them to play with. They love to rip apart the animals and get to the squeakers. TjMaxx has so many dog toys for cheap, and the dogs love them!
After we had left the store, Kyle said he wanted ice cream. We decide to try out the Golden Cow Creamery in Southend. It’s a new spot near all the breweries. It’s cute inside, and they have great ice cream! Of course, I was the only one who left with ice cream. I chose the salted Oreo with rainbow sprinkles. The consistency of the ice cream was perfect, but the flavor was way too salty! Like eye squinting salty. I want to go back and try a non-salty flavor, because I know the ice cream is good. I will definitely retry!
We had plans to meet Becca and her boyfriend on Sunday morning for breakfast at Stacks. It’s been almost a year since I’ve had breakfast there! When I was living in Ballantyne, I used to go nearly every weekend after church.
I get the same meal every time. Garden veggie omelet with peppers, onions, tomatoes, spinach, fresh fruit, and a side of wheat toast. Kyle and I ordered bacon and a pancake to split.
After breakfast, we all walked around the town. Waxhaw is filled with little shops, and exploring there never gets old! There is always something new.
I quickly became obsessed with these candles at first sniff. I’ve never smelled anything as powerful, or inviting before! These soy candles are like treasure. I was excited when I found the website for the Essence of the Bean candles! Every scent was powerful and heavenly! Even Kyle loved them.
We decided to give the ice cream thing one more shot, and the Waxhaw creamery has never failed us. I ordered a scoop of pistachio!
When we got back from Waxhaw, Kyle and I took the boys back to the dog park to play for a half hour.
Later Sunday afternoon, Meighan and I walked Leo to Lenny Boy Brewing. We wanted Kombuchas! I was so proud of how well Leo walked and behaved. I wish we could have brought Grumples, but he would have quit walking by mile four. That’s his limit.
I tried their ginger and strawberry kombucha! BOTH AMAZING. It’s nice that there are other options at breweries and not just beer. Plus, kombucha is super healthy!
This was Leo’s first 6 1/2 mile walk 🙂 There will be more in our future!
I stopped at the store Sunday night to pick up ingredients for broccoli salad. Kyle was grilling, so I made the side. The broccoli salad is a favorite!
Kyle’s wings were pretty fantastic as well! We also grilled up jalapeno burgers from Harris Teeter. You can get them over the counter, and you won’t regret it!
I worked on my NYC blog post all of Monday morning! 🙂 I had plans to go to the gym, but I decided to take the dogs for a long walk, and grocery shop instead. Since I was out of town, my fridge was empty.
I picked up ingredients for salads. My salad above had kale, cucumber, avocado, strawberries, blueberries, cinnamon pumpkin seeds, goat cheese, and grilled chicken. I used raspberry vinaigrette for the dressing.
If you’re wondering what dressings I use, these have been my favorites lately! You can NEVER EVER go wrong with Marie’s.
I spent Monday night watching Nicholas Sparks with my boys.
I took the pups for a three-mile dog walk at 6 am on Tuesday morning. Two times around my neighborhood is three miles, so it’s a perfect little path.
After our walk, I fed them, made coffee, and then we went back on the porch to sit. They enjoyed watching the kids catch the school bus, and I worked a little on the blog and emails.
I love that my grass if finally green and my rocks look SO MUCH BETTER than that nasty pine straw that was originally there. Once EVERYTHING is done, I’ll do before and after photos of my home. We are working on the back patio/porch now.
I headed over to the gym to take a barre class at 10 am. I was a little scared on how my body would hold up, but everything went smooth. I was very tight and not as flexible, but that’ll go away with time and a lot of patience. I’m pretty sore today from the class, so I’ll be taking a rest and just walking instead of weight training. It’s been nine days since I’ve ran, and I’m feeling so good. This running hiatus is going to be so good for me!
21 Grain Bread + Almond Butter for a post workout!
Dave’s Killer 21 Grain bread is so good! It’s only 60 calories, 9 g carbs, 1 g fat, and 3 g protein. I highly recommend this bread!

I had the same dinner again because this salad was amazing!!! I can’t wait to shop for ingredients later today and create a new salad to eat. I’m on my salad kick again. Imagine that. 😉

Love your salad dressing collection! I’m obsessed with the Bolthouse Farms Greek Yogurt Dressings. They’re all amazing! You should try if you haven’t 🙂 Most of them are about 40 calories for 2 tablespoons. Awesome for creamy dressings if you’re in the mood for one! I love the Cilantro Avocado one!

Your yard looks great! I live in the middle of the city and I really miss having my own outdoor space.
1. Unfortunately I have to work Saturday. Sunday we’ll celebrate Mother’s Day but not quite sure where yet.
2. If you saw my closet, you’d see that I hate organizing it. Oops.
3. I’ve got cats so no dogs. 🙂 But since I live in D.C., I would imagine I would love taking dogs down to the Mall or walking them around Roosevelt Island. If you come back to D.C. with Leo and Grumples, take them on a walk around Roosevelt Island. I bet they’d love it.

I gotta say, I love reading your posts. I know that you get this a lot but they really do inspire to me start making some changes. For instance…I have a really hard time with salad. Pretty much all I can do it a basic salad with romaine, ranch & croutons. But, based on your posts recently I branched out and tried a spinach salad with bacon bits, tomato, hard boiled egg and honey mustard dressing (probably still not incredibly healthy, but it’s a start!)
I also just got side lined by a surgery and then an infection to follow so all running progress I had made to date, is now gone and I’m starting from scratch. Relying on your posts over the next few weeks to keep me on track!!

1. I am going to Israel next week so I have a few last minute errands, but on Sunday for Mother’s Day my family is doing a really nice brunch at this cute little restaurant on the Delaware River. If it’s nice we hope to go for a hike after!
2. LOVE it. I’m an organization freak. It calms me and makes me feel I have everything under control.
3. I don’t have a dog but my roommate does. I love taking her to places that are fenced in and private so she can run around like CRAZY. We live in Philly so she doesn’t have a chance to do that much, and doesn’t do well with big dogs (she’s a little dog) so dog parks are tough. I need to find a brewery near me with kombucha – I love the gingery ones!

The visit was good. I’ll find out more about my knee on Friday, but he told me to stop running for about three months. No more than a mile. My hamstrings were super tight and I’ll be getting set up with a game plan soon.

I’ve found thrift stores and the salvation army is great for dog toys (my pit LOVES to destroy stuffed animals and sometimes I can find them for 50 cents!! so worth it!)

It’s always so nice to read your recaps!!! (I’ve been reading your blog since you first started tumblr). I just got back into running after a 6 year hiatus and I’m following your plan you posted a while back. Running is more difficult than I remember haha but worth it.
My weekends usually consist of coaching soccer for my stepson’s team and holding a few open houses for my listings. Posting a new recipe on the blog (which is getting a facelift right now) 🙂 and planning out my week ahead.
I love love love organizing my closet and getting my clothes out for a new season. (But I do fashion blog). It always makes me so happy to see the few things I may have forgotten about during the long winter we have here in Colorado. It’s cold from like September to almost June, with a few warm days here and there. Last year it rained so much in the summer, it hardly got warm enough for me to wear shorts the whole day. I’ve actually been looking into moving back to the east coast.
I wish I still had a dog but living in a small apt I don’t think it’s fair to them. I had a really cute schnoodle named Benny when I was married and I loved taking him on walks on the cherry creek trail here in Denver. We would walk so much everyday sometimes up to ten miles a day. It was so nice and relaxing. When I get a home of my own I will definitely be getting another adorable hypoallergenic puppy!!! Can’t wait to read your next post! All the best to you!

Your salads always look delicious and are great inspiration! Relaxing is wonderful! I need find a new workout routine, my old one got boring and I’ve gotten lazy with it.
This weekend I’m hoping to take my dog out and explore a new part of the state park near us. We usually go out to the same spots and I’m hoping to find some new favorite places. This is definitely our favorite thing to do together!
I have a love/hate relationship with organizing my closet. It’s such a tedious job, but I find it therapeutic at the same time. Getting rid of old clothes is like clearing out some of my life. Not to mention it makes room for new stuff! And I love switching clothes between seasons because I feel like I bought a new wardrobe without spending any money!

My current favorite salad combo is: shredded carrot, mixed greens, feta cheese, sunflower seeds, quinoa, and either hard boiled eggs or chicken with my homemade dressing. Soo good. ?

1. Going home to see my family for mothers day! I am taking my mom to a tea room for afternoon tea.
2. I am an organization neat freak and such a minimalist but I HATE organizing closets and cupboards! My mom would have me do it as punishment as a kid since she knew I hated it so much.
3. I don’t have a dog but we have a cat that we are leash training ?. We live in an apartment and he always wants to go outside so this is the safest way for him in the city I feel. They don’t walk like dogs but it is fun to see him walk and then pounce on bugs.

I hate blue cheese and I don’t like goat either! I am trying to cut dairy or of my diet anyway so I’m not too bummed out those doesn’t fit taste buds. When I used to work at Chipotle I was OBSESSED WITH dairy. But it left me with digestion issues and gas.
This weekend I’m planning on visiting an expo and also getting in some errands surrounding studying for an exam and cleaning the closet. Spring cleaning! Outer order,inner calm.

Great recap! I live in Charlotte and I have yet to try Lenny Boy or Golden Cow Creamery! Soon though. I do love the light rail!
I have two dogs and because they are older (13 and 11.5), the don’t do well at dog parks – some dogs are just too energetic for them. They love walks in our neighborhood and going to the mountains or the beach!
Going to hike Mount Mitchell this weekend with my husband and taking the dogs, although they will stay in the house we are renting. Should be fun. Luckily they travel well and I did find a few short, easy trails they can walk!
Luckily my closet is big enough where I don’t have to switch out clothes, but I do like going through it to donate clothes I haven’t worn in some time!
Who are you going to Hawaii with? I went almost 4 years ago to Maui and just loved it.

Saturday I’m spending the morning meeting my college roommate and step-mom for breakfast, and then we’re heading to an outdoor flea market! I’m super excited because I love breakfast, I love flea markets, and I love good weather. Other than that it’s going to be a catch-up weekend!
I have a love/hate relationship with cleaning my closet. I’m currently cleaning out stuff I haven’t worn in forever and putting it on Posh to try and re-sell it! Hoping to give my closet a re-fresh.

It feels so good to have a fresh closet with clothes YOU KNOW you’ll wear! I used to hang onto clothes for no reason, but now I feel less stressed when it comes to getting dressed lol.
Yes, they do have a dog bar! I haven’t been to it yet (it looks a bit stressful) lol Too many dogs give me anxiety! I’m so weird. I may try it sometime.

I checked out the bread and when I realized Amazon only sold it in packs of 4 loaves, I checked out their website for other sellers. Its says on their website the 21 grain is 120 calories per slice :-/ Rats!

I weirdly loved it. I made up for not running by walking and going to classes, but I loved not having to run or plan half my weekend around it. I know I have the itch, but it was nice! I will go back to short distance running eventually.

1. I am running a marathon this weekend in Oakland CA. It’s actually a little more than a marathon, it’s a 50km. It’s the Cinderella Trail Run if you’ve ever heard about it! They host a half marathon, a full marathon and then a 30 and 50km. I haven’t ran an official timed 50km before, so I am very excited (and anxious!!)
I don’t have to organize closets! I was a hater of this seasonal chore so when we built our home I had them install a rotating closet. One side is my fall and winter, and one is my spring/summer, and it turns just like a rotating book case. Best decision ever!
We LOVE to take our dogs to the Lake! We end our hikes with them with a swim and it’s messy but they love it!

This weekend I’m going on a hike and likely fishing with my boyfriend. We also plan to go to the farmers market and walk around with a coffee downtown. We were out of province for a wedding last weekend so I am looking forward to a calmer weekend at home.
I get excited about re-organizing my closet, but half way through I get tired and curse it because it always takes longer than I expect! Once it’s done I am always glad I spent the time re-organizing though!
There are a ton of hiking trails where I live so I often bring my little pup on hikes! He’s only 4 months old and sometimes makes me carry him – but I see it as a bonus workout because it’s as if I’m carrying around a 15 lb kettle bell during my hike haha!
We also love bringing our dog to the farmers market every weekend. We always get stopped for lots of puppy cuddles and many of the vendors like to give out dog treats 🙂
He also loves the dog park, as well as the doggy daycare (when I have to work long days) because he gets to play with other dogs.

That is a great way to think of it. LEO, the younger doodle LOVES HIKES! Grumples could care less lol He enjoys car rides and sitting on the porch to bark at people!

I live in the area and haven’t tried Chopt yet…which salad do you recommend? Also on the recommendations, which Marie’s dressing is your favorite? I used to eat the blue cheese dressing but since going dairy free I’ve been on the hunt for new favorites.

OMG! You should totally go! I used to get the Kebob cobb all the time, but I kept finding myself changing it up, and now I just build my own! That way you can add anything you want.
It really depends on the type of salad I’m making! I haven’t tried one I didn’t like, but I always stick to a vinaigrette/balsamic based one! Greek, Onion Shallot, Rasberry, and Balsalmic are great!

I am crazy about your pups!!!!! so adorable!! wish I could have one, but living in the city and apartment makes it impossible. and to be honest, leaving a pup alone at home, without big yard or something, while we are at the work whole day would make my heart broken.
I am here because of your recipes and workouts. Seeing you in your workout clothes (same here, in my private life) all the time is what I am used to, but that dress and sandals…. sooo cute!!!!! plus, blue is my favourite colour.

Oh, I love the boys so much 🙂 I totally understand though, it would be so hard to live in a city with them! Luckily Charlotte has so many parks and dog parks for the boys to play. I know I’m very fortunate enough to be able to stay home with them. When I first got Grumples, I worked as a nanny 7-5 and I felt SO BAD leaving him! It’s all about timing for pups.
Thank you so much! I just got that blue and polka dot dress at the Loft and I’m obsessed! Blue is one of my favorite colors too! I wear blue and white (dress clothes) most of the time!

Do you love or hate organizing closets? I hate organizing closets. It seems like I try to pack so much stuff into them that it’s like a game of tetris in my spare bedroom closet! Haha! I really need to go through my closet and get rid of some clothes but it seems like I can never get motivated to!
Where is your favorite place to bring your dog? My favorite place to bring my dog is to the river! He loves running, swimming, and exploring!

It’s unreal how excited I am that our town begins their summer Farmers Market tomorrow. My summer Saturday tradition includes going for a light run followed by iced coffee at the market, picking up my weekly sunflowers, and sampling some of the delicious goodies. During the summer I can’t even begin my weekend until this happens.
I LOVE organizing my closet -I began doing this a few weeks back when I couldn’t stand looking at my sweaters and boots anymore.
No dog yet, but once Hubs & I buy a house it’s first on the agenda. We have our favorite forest preserve we walk at all the time and I get insanely jealous when I see people and their pups.
P.s Leo looks very handsome with his new haircut 🙂
