You all know I’m a fan of super fast, simple and delicious recipes! Last night, I cooked up another! Jeremy and I were both craving something “Teriyaki”. I decided to make lettuce wraps because I have been craving them since eating at Pei Wei.
I’m surprised at how delicious these were! Jeremy gave them two thumbs up and said he’d give three if he had a third thumb. I was browsing recipes online and all of them had 15+ ingredients for the lettuce wraps, so I decided to go an easier route. Do you blame me?
I was excited about eating the leftovers for lunch today, but when I opened the fridge this morning…they were missing. Oh, Jeremy…
Ingredients: *1 head of iceberg lettuce, *1 1/2 lbs skinless, bonless chicken breast, *1 cup chopped green onion, *1 bell pepper, *1/2 cup diced water chestnuts, 1/2 cup & 1 tbsp low sodium Teriyaki sauce, *3 tbsps sweet chili sauce, *2 tbsps olive oil.
-Dice chicken up into pieces.
-Chop up peppers, onion, carrots, and water chestnuts.
Add the vegetables to a frying pan on high heat with 2 tablespoons of olive oil.
Add 1/4 cup of Teriyaki to the vegetables. Turn they heat to medium and let them simmer for ten minutes.
Keep the heat on medium. Add the chicken to the pan.
Add another 1/4 cup of Teriyaki sauce to the pan, cover and let the chicken cook slowly.
When the chicken is fully cooked, drain the extra juices.
Mix in 1 more tablespoon of the Teriyaki sauce and three tablespoons of sweet chili sauce.
Add a 1/2 cup to the lettuce wrap! I served my lettuce wraps with brown rice and steamed broccoli!

I am pinning this now! I love teriyaki and need some new ideas. I think I will tweak it and instead of the rice, I would add a little quinoa into the chicken mix. Maybe even add a tiny bit of cashews? Hmmm…so many options with this!

My boyfriend made these for me last night (yes he reads your blog) and they were delicious! He used a whole wheat tortilla and I used the lettuce wraps!
