Combine dry ingredients: In a mixing bowl, combine the oats, almond flour, salt, and baking soda.
Add wet ingredients: Mix in the egg, vanilla, maple syrup, and peanut butter until well combined.
Add mix-ins: Fold in the chocolate chunks.
Form cookies: Weigh out the cookie dough into 70-gram portions, and place them about 2 inches apart on a lined parchment baking sheet. Roll the dough into balls and gently press them down into cookie shapes. Note that the cookies won’t spread too much during baking.
