These Greek chicken bowls are a fresh, flavorful, and incredibly easy dinner that comes together in about 30 minutes. High protein & gluten-free! Roasted sweet potatoes form the base, topped with tender chicken cooked in Greek dressing, crisp salad vegetables, and a creamy homemade tzatziki that brings everything together. It is a simple, nutritious meal that feels hearty, colorful, and satisfying while still being light enough for a weeknight dinner. Perfect for serving over sweet potatoes, rice, or orzo.

I love easy dinner recipes, and that reminds me that I need to go through all my weekly recap blogs and put together a roundup of all the easy dinner recipes I have made over time for some inspiration.
Last night, I made these amazing 30 minute Greek bowls with roasted sweet potatoes, homemade tzatziki, chicken, and Greek salad. They were so filling and delicious, and so easy and nutritious to make. This recipe is going to be added to our monthly roundup for meals.
Roast Potatoes & Cook the Chicken
The first thing I did was slice the potatoes, add them to a baking dish, and roast them at 400 degrees with a little drizzle of avocado oil. Then I cooked the chicken by frying it in my Dutch oven over high heat with black pepper, dijon, sea salt, and avocado oil. Once it was browned and cooked through, I let it cook for a few more minutes with a few tablespoons of Greek dressing. Gosh, it was so good.
The key is to purchase thinly sliced chicken breasts, cut them into pieces, and make sure to finish cooking at 165 degrees. This will keep the chicken super tender and not dry.
I cook almost every meat in my dutch oven now. It gives it an amazing char flavor.
While the chicken is cooking, I prepare the tzatziki. Homemade tzatziki is so good. I have never had a store bought one that I liked. Of course, my favorite one is at our go to spot Ilios, so I wanted it to taste as close as possible.
I bought 5 percent fat plain Greek yogurt and mixed it with chopped cucumber, fresh lemon juice, chopped fresh garlic, chopped fresh dill, olive oil, and sea salt.
The Best Homemade Creamy Tzatziki
Once I mixed all the ingredients together, I gave it a little taste test to see if it needed more lemon, salt, or garlic.

Greek Vegetable Salad
The Greek salad vegetables include red onion, baby tomatoes, cucumber, and Greek salad dressing. I used Ken’s Steak House Greek Dressing, which is so good. I also like Marie’s Greek Dressing and Brother’s Greek Dressing. It is hard to find a bad Greek salad dressing.
More ingredients you could add to the Greek salad vegetables would be chickpeas, romaine lettuce, kale, olives, or bell peppers. I decided to keep it simple.

My husband walked in from work and his eyes lit up. He loves anything with chicken and sweet potatoes, but especially Greek food. I have been making a lot of dinner recipes lately so we can sit at the table and eat together.
Now, to be honest, my toddler will not touch anything I make like this, but he sits there with his smoothie and other “toddler safe” foods.
