How to Get Your Picky Child to Eat Healthy Vegetables: Try These Delicious Hidden Fruit and Veggie Oat Muffins!

Toddlers and kids will love these hidden fruit and veggie oat muffins. I have a picky little toddler who seems to be on an all-carb diet, so I have to find healthy snacks that he will actually eat. This recipe is a delicious way to sneak in extra nutrition! The muffins are perfectly balanced with wholesome ingredients like oats, zucchini, apples, bananas, carrots, honey, and Greek yogurt. I love boosting my son’s veggie intake sneakily! He LOVED these muffins (he kept calling them cake) and asked for more while we were on our walk this morning. Plus, I have so much zucchini from the garden in the summer, so I love having zucchini recipes. This recipe can also be made into mini muffins and oat bars. It’s an easy and fun toddler recipe to have on hand.

We have been packing these muffins on the go for weeks! Sometimes, we’ll take them on car rides, park trips, or morning walks. We store them in a ziplock bag on the countertop and store a bunch in the freezer. Once I find a recipe my picky toddler will eat, I go wild and make lots of them. My husband enjoys them even more than my toddler because I always have to make extra.

Storage Tips for Muffins:

  1. Room Temperature:

    • For longer freshness, you can store them in an airtight container in the refrigerator for up to 5 days. They may be slightly denser when chilled, so you can warm them up slightly in the microwave before serving if desired.
  3. Freezer:
    • To keep the muffins for an extended period, freeze them. Make sure they are completely cooled before placing them in a zip-top freezer bag or airtight container. They can be frozen for up to 6 months. For best results, label the bags with the date.

Thawing Frozen Muffins:

  • When ready to eat, you can thaw the muffins at room temperature or place them in the refrigerator overnight. If you’re in a hurry, you can microwave them for 20-30 seconds to warm them up.

Reheating:

  • For a freshly baked taste, you can reheat the muffins in a toaster oven or microwave for a few seconds before serving.

What ingredient swaps can I make in these fruit and veggie muffins?

Bananas – avocado, pumpkin puree, and butternut squash puree
Zucchini – eggplant, summer squash, and butternut squash puree
Apple – peaches, pears, applesauce, or berries
Carrots – cooked sweet potatoes, 
Eggs – 1 tbsp flaxseeds mixed with 3 tbsp water. 
Honey – you can replace it with any sugar you like! Try date sugar, maple syrup, or agave!
Greek Yogurt – 1/2 cup of milk or any yogurt.
Peanut Butter – Any nut butter works with this! You can use sunflower butter, almond butter, cashew butter, and even tahini. 

This recipe is very versatile! You can experiment with the muffins by adding ingredients like cocoa powder to make them chocolately, chocolate chips, walnuts, pumpkin spice, cranberries, and more! I plan to make them with pumpkin puree and spice seasoning in the fall!

Are these muffins gluten-free? Yes! (make sure to use 100% gluten-free oats)

How to Store Muffins

You can bake these muffins and store them for about three days at room temperature or up to five days in the fridge. You can serve them at room temperature or warmed slightly—or cold!

You can freeze thoroughly cooled muffins and store them in zip-top bags in the freezer for up to 6 months. Thaw at room temperature or in the fridge.

Ingredients
  

  • 1 Large Zucchini
  • 2-3 Large Extra Ripe Bananas
  • 1 Large Apple
  • 2 Large Carrots
  • 1/2 Cup Nut Butter (I used peanut butter)
  • 1/2 Cup Greek Yogurt or coconut yogurt
  • 1/2 Cup Honey or your choice of sweetener
  • 2 Tsps Vanilla Extract
  • 2 Large Eggs
  • 1/4 Tsp Sea Salt
  • 2 Tsps Baking Powder
  • 4 Tsps Ground Cinnamon
  • 5 Cups Oats
  • 2 Tbsps Chia Seeds

Instructions
 

  • Preheat oven to 350 degrees.
  • Add zucchini, apple, banana, carrots, nut butter, Greek yogurt, honey, vanilla, and eggs to the blender. Blend the ingredients on a medium speed until pureed.
  • In the blender, fold in the oats, sea salt, baking powder, cinnamon, and chia seeds, and mix on medium speed until combined.
  • Add 1/3 cup of batter to a greased muffin pan.
    You can also use muffin liners if you'd like!
  • Bake for 24-26 minutes.

If you want to make these muffins even easier, pour the batter into a greased baking pan and make them into oat bars. I made extras topped with chocolate chips. Bake the bars for 24-46 minutes at 350 degrees.

These muffins are great for healthy lunches for kids! They are perfect when stored in a kid’s lunch box!

One of the best ways to make muffin recipes easier is to throw all the ingredients into a blender! I have been making blender muffins and bars for a while now, and they are so easy and convenient.

    1. use about 3/4ths cups but also you’ll need to adjust your honey/or syrup for extra sweetness to make up for the banana swap.

    My toddler loves these, and surprisingly, I like them too! They are a snack I feel good about serving to her. I make a batch, freeze them, and then pop one in her lunchbox the night before she needs it. I love that I can make them ahead of time and freeze them!
