Chickpea Peanut Butter Blender Blondies | Toddler Approved
Toddler Approved Healthy Recipe | Chickpea Peanut Butter Blender Blondies. This recipe has only seven ingredients, and it’s gluten-free, dairy-free, and vegan.

You know it is a win when you make a healthy recipe that your family cannot stop eating. There is a viral recipe going around TikTok with chickpea blondies. I was hesitant to try it because the thought of tasting chickpeas in a dessert recipe sounded unappetizing. But I wanted to give it a shot since I have a sweets loving toddler who hates most green things unless it is a gummy bear or in a smoothie.
I made a few of the blondie recipes that were circulating, but they did not turn out well. So I was determined to keep playing around with the recipe until I got the best texture and a delicious taste with the chickpea flavor completely hidden. I think I nailed it with this one.
I have made these peanut butter chickpea brownies three times this weekend, and we are already running low again. I may attempt a cookie version next.
The best part about this recipe is that you throw all the ingredients into a blender, pour it into a baking dish, and bake. I love an easy recipe like this.
Chickpea Brownie Ingredients:
Chickpeas
Peanut Butter – you can replace it with any nut butter of your choice.
Maple Syrup – this recipe works with honey, agave, and date syrup.
Vanilla
Sea Salt
Baking Powder
Chocolate Chips – you can use dairy-free chocolate chips or add any toppings you’d like!
I love chickpea recipes because they are so healthy. I already have a picky eater, so hiding nutritious foods is one of my favorite ways to make sure he is getting what his body needs. Chickpeas are low in saturated fat, high in protein, high in dietary fiber, and a great source of folate, iron, vitamin C, and phosphorus.
Adding peanut butter brings in healthy fats, extra protein, fiber, and magnesium, making this recipe even more nourishing and filling.

Healthy Dessert Recipe for Kids
My son took a fork to the pan and started eating the blondies. He loves helping me in the kitchen and wanted to pour all the ingredients into the blender on the second batch. It’s fun when they get involved!

How to Store Chickpea Brownies
You can store these on the countertop, but they are best kept in the refrigerator. They have not lasted longer than 24 hours in our house yet, so I have not tried freezing them. I am excited to try more recipes with hidden veggies and healthy toddler options, so if you have any favorites, make sure to send them my way.
