Peanut Butter Chickpea Blondies

Ingredients
  

  • 2 Cans Organic Chickpeas (30 ounces)
  • 1 Cup Creamy Peanut Butter -or any nut butter of choice
  • 3/4 Cup Pure Maple Syrup
  • 1 1/2 Tsp Vanilla
  • 1 Tsp Baking Powder
  • 1/2 Tsp Sea Salt
  • 1/4 Cup Chocolate Chips -or any extra toppings
Peanut Butter Chickpea Blondies

Instructions
 

  • Heat oven to 350 degrees.
  • Rinse and drain canned chickpeas.
  • Add chickpeas, peanut butter, maple syrup, vanilla, baking powder, and sea salt to a blender. Blend on high for about 20 seconds until the ingredients are creamy (do not over blend.)
  • Line a 5 x 9 baking dish with parchment paper.
    Pour the blended ingredients into the baking dish, and top with chocolate chips.
  • Bake the blondies for 45-50 minutes. Allow the blondies to come to room temperature before slicing.
  • Store in the refrigerator for best results.
