  • 2 lbs ground chicken
  • 2 cups almond flour
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp garlic salt

Instructions
 

  • preheat oven to 385
  • In a bowl, combine the almond flour, garlic powder, onion powder, black pepper, and garlic salt together.
  • Roll oversized tablespoons of the ground chicken into chicken nugget shapes.
  • Coat the chicken with the almond flour mixture and place on a baking sheet.
  • Cook each side for about 10-12 minutes.

  2. Ah thank you for this! I had a moment the other night. Chex mix in the kitchen. I just had a cup and woke up feeling nauseous with a migraine the next day! I tend to forget what happens when I eat gluten, even a small amount. I haven’t been formally diagnosed with gluten issues, but that reaction was a worse feeling than keto flu or eating something with a lot of sugar. I think these chicken nuggets will satisfy that craving for something bread-y. CAnt wait to make them soon!

I just have a question for when I make them – when I buy ground chicken from the store, it’s kind of like just one big long strand, how do you break that up into tablespoon size? Are you cutting it up with a knife first? I hope this makes sense! It’s just not something that “pulls apart” easily into littler pieces so I’m not sure how to do that part. Thanks 🙂

I could be missing something but the directions don’t say to mix the almond flour into the chicken. Or am I not reading it right.? Haha. I’m excited to make these.     I made these just now and love them! I’ve been trying to keto diet for myself since I am a type one diabetic and found that it helps my blood sugars, I’ve found SOO many recipes for my favorite foods and saved money making them and am hooked. That being said my only issue sometimes is finding the serving size and nutritional information since I need it in order to give myself my insulin when I eat, I was wondering if you by chance had the amount of nuggets per serving and how many carbohydrates per serving?
