Good Morning!
I just got back from walking the dogs a couple of miles in a sweatshirt. Yup, you heard that right! It was fifty-nine degrees. I’m currently sitting at the dining room table with the windows open. The breeze is blowing in, I can hear the birds chirping, and this feels heavenly. For the past several months, it’s been in the eighties first thing in the morning, and the heat is getting to me. This was such a beautiful surprise. I’m hoping our instructor gives us an outdoor workout for today.
I hope you all had great weekends. Mine was very low-key yet filling. I stayed up late last night putting the photos together for this post so it would be ready for me to write in the morning. I think the Monday morning recaps are going to be my favorite. I was looking forward to it all weekend, so here it is!
I mentioned in my last recap that all of the classes at my gym last week were canceled. I was a little bummed at first, but it pushed me to venture out to different gyms and try their classes. After meal prepping on Monday afternoon, I headed out to a new gym a town over. I did an abs & glutes class followed by one mile run on the treadmill. Oh. My. Goodness. It was tough!
When I got home, I made a plate from the meal prepped food (this is just too easy) and then took the dogs for a walk. My plate had green beans, chicken & turkey meat balls, brussels sprouts, chicken & sweet potato slices. After the dog walk, I plopped on the couch to watch The Bachelorette. Still boring. Still, can’t stop watching. I’m just excited for BIP to start!
Tuesday morning’s breakfast complimentary of the meal prep. Honestly, why haven’t I done this sooner? I am going to stop at the store to meal prep for the week after the gym this morning. I don’t know what I’m going to make yet, but it’ll be different. I’m thinking salads. My breakfast plate had an English muffin with peanut butter, strawberries, and egg cups.
On Tuesday, I headed out for a long walk with the pups. I was so excited because my FitBit Alta arrived!
After my walk, I headed over to my gym and decided to do a little circuit of my own.
I went at my own pace and just took the time to enjoy the entire room to myself. Sometimes an empty gym can be therapeutic to me.
I stopped to grab a cappuccino on the way home. My gym is next to a coffee shop, so it’s dangerous. A lot of people think that coffee drinks can be unhealthy, but there are so many healthier/lighter options you can order. I always order a small skim cappuccino with two shots of espresso. It’s only 60 calories, and it has protein. Iced coffees without cream, black coffee with skim, or Americanos are great options. Just try to stick to light milk (optional), away from syrups, and ditch the frappuccinos. That’s just what I usually do 🙂
Meal prep for dinner! I warmed up chicken breast, potatoes, and green beans.
I was super hungry around 9 pm because I had an early dinner, so I snacked on Greek yogurt and a plum. I love plums this time of year.
The FitBit is a game changer when it comes to getting in steps. I walk my dogs A LOT. I don’t do it for my exercise; I do it for theirs. I try to walk them one and a half miles in the morning, one mile in the afternoon, and one mile before bed. The crazy thing is that I do it separately unless Kyle is here. That adds in extra steps for me as well, which is perfect for making my lifestyle more active.
I woke up at 6 am on Wednesday to head to a new HIIT class. First, I walked the dogs a couple of miles and then sat down to have coffee. I refuse to go anywhere without having an hour to myself. My day is out of whack if I don’t.
The class was intense for the first 45 minutes, but then the last fifteen minutes were dedicated to yoga. I didn’t like that at all. I went in with the mindset that we’d be going hard for an hour, and the yoga threw me off. I have to be in the yoga mood, and I was just ready to go go go and not calm down. After that random yoga session, I ran a couple of miles on the treadmill to blow off some energy I had.
For lunch, I had chicken and some egg cups! I had an RX Bar on the way home from the gym as well. I love the RX Bars for pre or post workout options.
I spent a lot of time on the blog and emails all afternoon. For dinner, I just heated up some meal prep! Green beans, meatballs, sweet potatoes, and chicken.
I ended the night drinking tea and watching Season 2 of Red Oaks! It’s on Amazon Prime. It’s kind of funny and weird all at the same time.
I woke up pretty sore on Thursday, so rest day it was!
For breakfast, I had plums, strawberries, and egg cups.
I drove the boys out to a trail to walk because it was a bit cooler outside.
I ended the night working on the blog and enjoying my new Almond essential oil candle from Bath & Body Works. It smelled SO GOOD!! They had 50% off all candles a couple of weeks ago.
Pre Bootcamp breakfast! English muffin with peanut butter and jelly 🙂 I also had a couple of egg cups.
I was excited to get back to my regular Friday afternoon bootcamp class with Meighan. This is the most intense workout of the week and the perfect way to start the weekend.
DRENCHED.
Each round has four high-Intensity exercises that we have to repeat for ten minutes. They arent easy workouts either, they are super hard, and I love the push. Each week I get better and better. I love seeing the progress in endurance! I have VCD (feels like asthma) that sometimes flares up if my heart rate is extremely high. It’s never been a huge problem for me, and I get symptoms maybe once a month. I had a flare up during my half marathon, which thank goodness it was on the last mile. While doing suicides on Friday, it was happening again. Luckily, it’ll stop when I pause a second and let my heart rate and breathing go down. The more in shape I get, the less it happens, so it’s an incentive to keep working out and practicing the breathing techniques recommended from my specialist. I think the scariest part about VCD is that if you freak out, it turns into a panic attack and gets worse. So remaining calm is key.
After the gym, I met up with my family to have coffee and desserts at Amelie’s French Bakery. Sometimes dessert and coffee makes for the perfect post workout 🙂 Treat yo self.
I ordered a cappuccino.
We all split desserts. We picked out the chocolate eclair (my dad’s favorite), meringue, mousse cup and a key lime tart. My pick was the lemon mousse cup.
Friday evening was pretty intense.
It started to storm hard on the drive home. I was taking the back roads to my house and could hardly see because of how strong the rain was. The one thing I’m good at is remaining calm. I could be in the middle of a tornado, and I’d be able to analyze my next move without losing my cool. I noticed the cars in front of me stopped. A giant tree had fallen. As soon as I was getting ready to turn around and go the opposite direction on the back road, another tree fell about ten feet from my car. These are big trees we are talking about, so I knew the area wasn’t safe. All of a sudden lightning hit the electric line, and it caused one of the biggest explosions I have ever seen. It was loud, and I could still see the flashing lights when I closed my eyes for hours afterward. I was nervous for the cars ahead of me and had no idea if they were OK or not. I called 911 to get someone out to help. The cars ahead of me were trapped between the trees, and it was very unsafe on the road, lined with big oaks, near the electric lines. I drove a couple of yards backward to get a house number for the fire department. As soon as I left the spot I was in; a giant tree fell in front of me where my car was. I guess it’s true when they say timing is everything. While I was on the phone, a smaller tree fell on top of my car. I didn’t care at this point because everyone was OK and a car can be fixed. The storm finally eased up, and I made it safely home! It was pretty stressful, so I went home to soak up what just happened and try to move on.
Kyle and I were going to go out for sushi on Friday night, but I was just too exhausted. We decided to make scrambled eggs, macaroni with peas, and English muffin pizzas! We watched Dateline and then headed to bed!
I woke up at 5:00 am on Saturday morning to have coffee before heading out for a workout and brunch. If I wake up super early, I usually have toast or an English muffin with Peanut Butter with my coffee. This holds me over until actual breakfast time.
Meighan, Caitlin, and I usually do Saturday morning boot camps, but we wanted to switch it up and do something different. You can get burned out if you do the same workouts all the time. Plus, it was Caitlin’s birthday! We tried out FlyBarre. You feel the burn in this class, and it’s nice because you’re not drenched in sweat afterword. Funny Story, there was a rip in my resistance band, and I should have known not to use it, but I did it anyways. During one of the workouts, it snapped and flung at the girl next to me. Luckily she thought was hilarious, so I got away with it.
After class, we walked over to Eddie’s Place for breakfast. I ordered an egg white omelet with spinach, tomato, onion, and bell pepper. It came with a side of fresh fruit and wheat toast. I was impressed with their coffee too 🙂
When I got home, Kyle and I started the show “Ozark” on Netflix. It’s a very addicting show! Jason Bateman is such a great actor. I love that he can play so many roles! Around noon, I needed a snack, so I made homemade kale chips. I tossed the kale in olive oil, sprinkled sea salt and garlic powder on top, and baked for twelve minutes at 325!
While Kyle was meal prepping his food for the weak, I whipped up some blueberry muffin bars! 🙂 You can find the recipe here.
Grumples had a fun surprise in the mail 🙂 Kyle’s mom sent him a Bark Box for his birthday! He was so excited and so was Leo! They played around with the new toys for hours!
We were feeling lazy again for dinner, so we made English muffin pizzas. These little pizzas are so good. We used whole grain English muffins, pizza sauce, and Go-Veggie vegan cheese. I used peper jack cheese on his. The weather was PERFECT on Saturday, so we headed out for a long walk with the dogs.
We planted ourselves on Sunday morning to finish the last episode of the season. Yup. We watched an entire season in 24 hours. That’s our Netflix Binge mode.
I felt like it had been forever since I had seen Becca. We have both been busy, and our schedules were not working with each other. We finally found time on Sunday to get together for breakfast. We met in Ballantyne at Rush Espresso & HOLY COW GUYS! This place has changed so much. When I first moved to Charlotte, they had coffee drinks and a couple of pastries on the menu. They were also in a different location across the street. Now, they have wine and full lunch and breakfast menu! I was so impressed and bummed I had not known about this!
How fun is that plate? It reminded me of a breakfast I ordered in Hawaii.
Instead of getting regular coffee, I ordered a cappuccino with an extra shot of espresso.
I ordered the “Light Start.” It had two poached eggs over avocado slices and sourdough toast. It also came with fresh fruit, cherry tomatoes, and a lemon drizzle. This is now one of my favorite breakfast dishes in Charlotte.
The food was cooked perfectly and the fruit was super fresh.
After breakfast, I stopped at The Fresh Market for some dinner ingredients and snacks. My favorite find? PEPPER JACK SKINNY POP & IT’S AS GOOD AS IT SOUNDS!
I also picked up some other random items. I can get myself into trouble at the Fresh Market because they always have fun new things to try.
On Sunday afternoon, Kyle and I headed to the gym together. I did a two mile run on the treadmill followed by a one mile walk. I benched a bit and then called it quits. I decided to take it easy since Monday would be tough.
He’s obsessed with that new toy from Bark Box.
We had Chicken Ala Venezia for dinner. It was just baked chicken stuffed with spinach and ricotta and patted with egg and parmesan.
I was in the mood for deviled eggs. These guacamole deviled eggs topped with salmon was inspired by Meighan’s recipe she made at Christmas!
I hard boiled sixteen eggs, but only saved half of the yolks. In a bowl, I mixed two tablespoons of cream cheese, eight egg yolks, and 1/3 Cup of guacamole. I also sprinkled in some black pepper.
I filled the egg halves with the delicious mixture! We dipped some pita chips in the leftover filling. So tasty 🙂
I topped the eggs with smoked salmon, dill weed, and paprika!
I let them chill in the fridge for a half hour before serving. These are so easy and quick to make for last minute parties!
The side salad was baby kale and chard, mixed with quinoa, goat cheese, and Marie’s Greek dressing.
The perfect Sunday night meal 🙂 Kyle and I headed out on a very long dog walk (our favorite thing to do) because it was so nice out. We have been blessed with beautiful weather the past couple of days.
I had some work to do Sunday night, so I had a Celsius drink for some natural caffeine.
Leo decided to distract me, but I dind’t mind 🙂

Love your blog!! It seriously brightens my day. This weekend was so eventful!! I have a new nephew that came into the world on Saturday!! I’m already so in love!! I feel you with stores getting you in trouble. I seriously can’t leave target or trader joes without spending $100. There isn’t a specific “product” that I have been loving lately, however I am becoming slightly obsessed with zucchini noodles with spicy tomato sauce!! so delicious!!!

The highlight of my weekend was helping my brother in law and his fiance move into their new house! We helped them with painting, cleaning, and moving some furniture in. It was great weather, and an easy way to get some exercise plus just hang out.
The store that always gets me in trouble is Target! Seriously I just want to buy everything there, I ALWAYS leave with more than I came for!!
Lately my favorite product has been my Dr. Jart Cicapair Tiger Grass cream. I picked it up at Sephora and it rocks! It has a green tint but then turns beige when you rub it in, so it evens out redness & skin tone, and also has SPF. It’s perfect for hot summer days when I don’t want to wear foundation.
You are such a good sister n law!! That is a lot of work. Hope you got beer and pizza out of it 🙂 (the moving food staple)

1) Highlight of my weekend? I did my first cycle class ever Saturday morning and holy cow did it kick my butt. I’m not much of a cycle person, I prefer to run and lift so I don’t know if I’ll do it much but it was nice to change it up! And then yesterday was spent on a beach/hiking along Lake Michigan!
2) Trader Joe’s! Every. Time.
3) I can’t have dairy and have been missing yogurt lately. I came across dairy-free yogurts that I enjoyed but the flavors were all loaded with unwanted sugar. I then found coconut milk yogurt by SO Delicious that was UNSWEETENED and have had it for breakfast with honey, granola, and blueberries for the last week! The best part is it tastes just like the dairy-filled yogurt. Yay!

How many hours a week would you say you spend working on the blog?
I work on my blog constantly. When I’m out and about, I’m gathering content, taking photos, writing down workouts, editing food pics, spending hours a day on emails, hours writing, hours loading photos, hours replying back to comments, and so on. It’s fun, but it’s also a lot of work behind the scenes. I work about six-eight hours a day on the blog.
Good to see you having fun, Taralynn! The highlight of my week was Saturday – even though I had to go back to work for a rushing project on Saturday, I finished pretty quickly and got to spend the whole afternoon and night with my boyfriend. Sunday, not so much though. I fell seriously sick!

Wow what a week! So glad that your okay after that storm, sounded terrible. I made your egg cups over the weekend and put some chilli in, OMG so good! The highlight of my weekend was painting the feature wall in my bedroom a deep dark blue looks so good, Now to get some brass fixtures to complete the room. Then I booked my Christmas vacation lol, I know it way to soon to think about Christmas but the tickets were so cheep I couldn’t say no. What shop doesn’t get me in trouble most of the time it’s target or the supermarket. One product I am loving is Elizabeth Arden’s raspberry lipstick, I am not one for much makeup at all but I was given it as a gift and it looks amazing with my skin tone and dark brown hair.. thanks for a great post, have a fantastic week!!

I just bought the same Fitbit and I love it! It makes me get off my butt at work and park across the parking lot.

I love my Fitbit for the steps, but the calories are always SO OFF which is disappointing. I didn’t realize it until I went on a two mile walk and it told me I had burned 390 calories…yeah, I don’t think so haha. I decided to google it and it turns out other people were having the same problem. Oh well, I care about the steps way more anyways!

The calories are based on how many calories your body burns during the day. Even your resting calories! Our bodies burn calories when we breathe, sit on the couch, when we sleep and to just live. If you go to the charts for your two mile walk, it should show how many calories you burned during that walk. You could also make sure your information is correct in the profile.

Loving the meal prep posts! The meatballs that you made last week look amazing. Topped over some zoodles or spaghetti squash would be such an easy, yet delicious meal!
I also just got a Fitbit Alta last week. I’m loving it! I’m recovering from heart surgery now, so working out isn’t an option. However, I can walk, and every day, I try to walk a little bit more! It’s so accurate!
1- The highlight of my weekend was finally coming home from a month spent in the hospital! I’m able to cook again, write blogs, and get back into a routine!
2- Whole Foods and Trader Joe’s often get me into trouble…there are so many new products to try!
3- My current favorite product is also my new Fitbit. I got a pale pink band to match my iPhone case, laptop shell, keyboard cover, and even my nails! I’m surrounded by this calming, pale pink color. I also love it when it vibrates every day to tell me that I hit my steps goal. Such a victorious feeling!

Ahhh! You’re the only other person I’ve ever heard say you have VCD! I have that along with asthma, but whenever I tell people, they look at me like I’m crazy because they have no idea what it is. But you’re right, it gets better the more I work out! Highlight of the weekend was definitely being in Manarola (last leg of our Italy trip). It’s this perfect little beach town with so much yummy food and amazing sunsets. We literally went through three tubs of pesto in 2 days. You would love it!
Any health food store will get me in trouble. I’m a sucker for great packaging and fresh bright foods. Especially if I’m hungry. Or thirsty. Or… alive :).
I’m currently loving the Garden of Life pre-workout! I stopped taking pre-workouts because they have so many weird, sketchy ingredients. But then I found Garden of Life had one, and it’s AMAZING for those days when I just can’t get it together for a workout. And it’s all clean ingredients that I can read!
It’s such a weird thing to describe! I should bring an inhaler and I don’t, but I know when it’s starting and I immediately pull back and it’s handled. I’ve never met anyone else that has it either.
& thank you! I don’t know what happened over the years, but I can be a cucumber. I feel like I’d be a good cop lol

OMG I dont know what is up, but it’s been so nice in the mornings here. We’ve been walking 3 miles around 6 am every day!
I can’t wait for BIP to start either! It pretty much is the only reason I keep up with bachelorette/bachelor news. Your meals all look soo delicious and that French bakery looks so cute! I am definitely craving a cappuccino now though!

I have the FitBit Charge 2 and I love it. The law firm I work for has a wellness program which gives out gift cards as rewards when reaching a certain number of steps each month. It’s a great incentive, and I just love seeing how many steps I take each day.
So scary to read about that bad storm and toppling trees. You had an angel watching over you for sure.

I never would have thought to top deviled eggs with smoked salmon – what a great idea! I’m always looking for easy, portable snacks that are packed with protein that I can take to work. These would be perfect to pack in a lunchbox with a cold pack. Thanks for the idea! And so glad you’re okay from that intense storm – that sounds so scary!

What brand of jelly do you use? I love strawberry jelly on toast but it’s so dang high in sugar!
I use an organic one from Earthfare. The reason I eat the jelly is for the sugar before a high-intensity workout. I normally don’t eat it if I’m not working out that day.
