My Dad knows how to get me to come over. All he has to say is “I have soup in the crockpot” and I’m there. My dad is the soup guy in the family and I love everything he comes up with.
I promised to share this recipe a couple of weeks ago, and I’m sorry it took me so long, but better late than never 🙂
Ingredients:
*4 Lbs Chicken With Skin & Bone (I used whole chicken)
*4 Large Carrots
*5 Celery Stalks
*1 Large Yellow Onion
*4 Tablespoons Better Than Bouillon Chicken Flavor
*1 Small Sweet Potato
*1 Cup Black Beans
*1 Cup White Beans
*1 Tablespoon Brown Sugar
*Two Cups Brown Rice
*1 Tsp Black Pepper
*1 Tsp Sea Salt
*1 Tsp Garlic Powder
*1 Tsp Italian Seasoning
*2 1/2 Quarts Water
*1 Can Cream of Chicken.
*Heat water and chicken on high heat until water begins to boil, reduce heat and cover. Let the chicken simmer for thirty minutes.
*Remove the chicken from the bone and the skin from the chicken.
*Add the water from the chicken into the crock pot and add the can of cream of chicken.
*Turn the crock pot on high and add the chicken, seasoning, and chicken base to the crock pot.
*Start cutting up the vegetables!
*Add the celery, onion, sweet potato, carrots, drained and rinsed beans to the crock pot.
Cook all the ingredients in the crockpot on medium high for about six hours. Add uncooked rice and allow it to cook before serving. Taste the soup and determine if it needs more seasonings
I added in some cheddar cheese and croutons for an extra kick!
This recipe makes about 24 cups & it’s perfect for a cold winter day!

That sounds so good! My favorite “soup” is sweet potato, black bean and quinoa stew. 3 large sweet potatoes (diced), can of black beans (drained and rinsed), 1 cup quinoa, 4 cups chicken broth, 1 packet of chili seasoning, and 1 lb boneless skinless chicken breasts. Throw it all in a crock pot and shred the chicken after a few hours. Easy and delicious!
I can’t wait for spring! I’m currently pregnant and I’ll be that much closer to my due date…not to mention I’m dying to take some long walks and hikes without freezing cold weather!

I do not, but if you type in all the ingredients in an online recipe calculator that you use in your soup and divide it by 24 you’ll get the macros! 🙂

Your soup looks yummy! My favorite cuisine that someone in my family makes is my grandma’s potato soup. She makes me a big batch of it every year so I can eat on it all through the winter. I am soooooo ready for spring! I hate cold weather!

This soup look so good!! I can’t wait to make it!! My favorite soup is italian wedding or spinach egg drop!! so good!!! Honestly I wouldn’t mind if winter stuck around a little longer. Don’t get me wrong I love spring and summer but winter is definitely my favorite.

This looks delicious!! When making this how much chicken broth do you add to the soup? Or if cooking a whole chicken and using that broth how much water do you add to the chicken when cooking? And how long would you cook chicken for best flavor?
