Italian Style Guacamole

One of the best things about summer is the fresh avocados. I buy them all year round, but they never taste as great as they do in the summer. I love putting avocados in my salad, in my wraps, and in my omelets, but nothing compares to turning them into guacamole.

My friend’s dad always makes an Italian style guacamole. I love a garlic based guacamole; I’m not a fan of eating it plain. I hate boring. Whenever we are over for dinner, he usually has a giant bowl sitting on the counter for us, and it’s to die for. I decided to make his version for our cookout yesterday to go with the peach salsa.

Ingredients: 4 large ripe avocados, 1/4 cup chopped green onion, 1/4 cup diced red onion, 3 roma tomatoes, 1/4 cup chopped italian parsley, juice of 1/2 small lime, garlic powder, salt, pepper, 2 tablespoons olive oil, 1/4 red bell pepper.

Scoop out avocado and add them to a large mixing bowl.

Add tomatoes, onion, parsley, pepper, lime, olive oil and mix.

Start adding salt, pepper, and garlic powder. Use your tastebuds to determent if you need more of the three. I kept adding them until it was perfect!

I garnished the guacamole with a tomato slice, lime, parsley, and pepper!

The guacamole was a hit! I like to use carrot chips with it. The dip had so much flavor and I could have eaten it all night! Some put it on their burgers.

  3. This looks great! I love adding a couple dashes of hot sauce to my guac for just a little kick. I once had guac at a restaurant in DC that mixed in grilled chopped pineapple. It was AMAZING and I’ve re-created it at home before. Perfect with fajitas.

  5. This looks SO good! But I’m confused: how is this Italian? The ingredients are the same as Mexican guac.

    1. Yeah I was wondering the same thing… parsley instead of cilantro maybe? seems like a stretch though lol. Fresh minced garlic is in all guacamoles that I have tried!

  7. I actually would consider putting this on some brown rice or zucchini noodles to make this like a pesto! Yummy! Or dip it with some ciabatta!

    1. I use a mixture of cameras! My olympus tough camera, the iPhone 6 plus, and my EOS Rebel with several different lenses.
