Recap Time: Running, Eats, & Dogs!

It’s been weeks since I’ve done a long recap post. I’ve been so preoccupied with my Dominican trip posts that I’ve put all my others on hold. I figured I’d do a quick little recap before going to bed tonight.

When I got back from the Dominican, I was pretty sore, but I didn’t want to take a break from working out and so I did a light four mile run. 1st mile: 10:39, 2nd mile: 10:02, third mile: 9:52, 4th mile: 9:42. I guess with those times it’s more of a jog than a run.  After running, I walked two miles back to the house and then stretched. I’m slowly working my way up on the running regimen because of my previous injuries.

It was so nice out on Wednesday that I walked a mile to the grocery store and a mile back with my groceries. I didn’t see the point in wasting a beautiful day. When I was in the DR, I was inspired by the infused water. I drank so much water while I was over there and so I wanted to make some for the house when I got back to help me drink more water.

The infused water has: water, coconut water, cucumber, lemon, lime, mint leaves.

I’ve been making “eggs over easy omelets” lately. They have 6 egg whites and 1 whole egg with some seasonings.

I went for another light run on Thursday. I did a slow 5k. 1st mile: 10:39, 2nd mile: 10:15, 3rd mile, 9:44. I’m so paranoid with hurting my knee that I’m going slow for a while.

After my workout, I relaxed in a bubble bath and continued to read my book, “It Was Me All Along” by Andie Mitchell! It’s incredible. I’ll do a post when I finish it. I’ve been reading a chapter a day.

Friday morning, I did a circuit training with a trainer. It was such an awesome workout and I felt so great afterwards. To fuel back up, I had blood oranges, an omelet, and a slice of toast with jam.

Later Friday, I Had a crazy sweet tooth and so I blended up cashew milk, tsp honey, 1/2 banana, ice, and fresh coconut! That did the trick: If you freeze it for an hour, it gets creamy like ice cream.

I finally went grocery shopping Friday night. I bought some kale for homemade kale chips and tossed kale salad.

I also made stuffed taco shrimp quinoa peppers! They were incredible and I’ll post that recipe soon. Saturday, I went to see Duff, had dinner with Nick, and then passed out at like 10 pm.

I went out to breakfast after church this morning with my family and Nick’s family. I ordered the Farmer’s omelet, wheat toast, country potatoes, and a side of bacon. I’m not a huge fan of the potatoes, but the omelet was amazing! I had to pick the cheese out because I forgot to say no cheese. I don’t like that processed cheese in my omelets. I like real cheese.

Later in the afternoon I went to Dominic’s, Nick’s lithe brother’s, game. He’s an awesome baseball player! We also brought Luke, Nick’s dog. I couldn’t take my eyes off of the baby Grumples! I’m getting puppy fever.

For dinner, we grilled out at Nick’s parents! I was in the mood for shrimp and Nick wanted steak.

We are obsessed with the bourbon marinade and so I let the shrimp cook in that for a while. We picked up the bourbon marinade from the Peach Stand in Fort Mill.

Dinner was absolutely fantastic and so was my week!

      After a busy trip, it’s always nice to come home and get back into the swing of things. I love how calm Luke is! (It’s nick’s dog) and he can go to the fields and behave. Grumples wants to jump on everything that walks by. We are still working on it!

  2. All of your eggs in the post look great! I had a veggie omelet for dinner last night with mushrooms, green peppers, onions, and a little bit of cheese (topped with salsa!) and it hit the spot.

    1. Thank you! That omelet sounds relish (minus the mushrooms) I can’t do those yet! I love salsa and guacamole on eggs!

  3. Hi Taralynn! I was just wondering how you worked up to running? I committed to a triathlon running four miles in August and I was wondering if you have any advice on how to work up to that. Have you been running all your life or did you start running and walking? I have never even ran a mile before but thought the commitment and goal will help me train seriously! Thank you!

    1. I second this request! I need some advice on how to work on speeding up my running. It takes me around 42 minutes to finish a 5k, and that’s without stopping to walk…I find that if I stop, I’m not able to pick up the pace again.

      1. Atleast you’re running without stopping! I picked up my pace naturally. The easier running got, the faster I got. You don’t want to force your pace or you can injure yourself (done that) just do what is natural. Maybe incorporate some small sprints.

    2. It took me a long time to run just one mile. I started out walking and walking. Every time I stop running, I have to try to get back into it again. I started doing walk/runs walk 1 min, run 1 min, run 2 min, walk 2 min and all kinds of intervals until I just could run. I worked on being able to run 30 minutes without stopping at a slow pace and then picked up the pace each time. It took a while!

  4. Loved the quinoa stuffed peppers. I could live off of tacos, so I like this idea for a healthy alternative. Have a good week!

  12. SO glad you had a nice trip!! Well deserved break- and the house you stayed in looked so beautiful!
    And yes I agree with the previous posts I would love a post that talks more about running- as I can’t run at all! I can do the elliptical and stairs but the treadmill I have so much trouble with.

I’m trying to boost my running and I’ll keep posting about it! 🙂 I never used to be able to run and thought I’d never be able to but if you keep working at it, you’ll get there!   13. Hey Taralynn! I want to start running/jogging, I always see in your posts that you go for runs, so I have a couple questions if you don’t mind. 1. Where do you run? On concrete or asphalt? I heard it really hurts your knees and so I am a bit scared, do you know something about that? 2. Is it normal to jog 4-5 days a week? How many days do you normally run? Do you take days off? 3. I am super interested on jogging I would love it if sometime in the future you could make a post about tips for begginer runners. Your website is awesome!
