I really didn’t feel like going to the grocery store last night, picking up food, or making anything special, so I prepared a quick salad.
Earlier in the day, I sautéed a ton of vegetables in a Wok pan to eat throughout the day. I like to add them to my omelets and the cold sautéed veggies to my salads. This salad had fresh romaine, croutons, baked chicken, sautéed onions, peppers, squash, peas, and mozzarella cheese.
The chicken was baked at 350 degrees and seasoned with brown sugar, garlic and herb, and olive oil.
Some people think it’s sad to sit and have dinner by themselves, but I think it’s relaxing. Of course, I had my computer and T.V. right in front of me 😉

you should try seasoning the chicken with brown surgar and a pack of italian dressing mix. well its backing it macks the best sauce that i like to put over roasted squash, zuccinni, red potatos, and onions. my whole family loves it.

lol that is usually how I have dinner at night. TV on with my computer and other work on the side. ;)I like to multitask and listen to tv at the same time

We can relate on a lot of things right now. I can sadly say that I got away from the blog world for most of the month of July and even before that I wasn’t as active as I used to be. I used to read your blog all the time but then I stopped because life happens like that sometimes. I am gathering that you and your guy are no longer together and this is the first time you are living on your own. I ended a 4 year relationship with the man I saw myself marrying and then moved out on my own. Things were strange and hard in the beginning but with time things got easier and better. And I will say that some of my favorite evenings were spent alone at home with dinner in hand while watching TV.
