When I was a kid, my mom always told me to eat my vegetables and I’d usually dump them in the trash or feed them to my cat. I think if the vegetables that were served as a kid were dressed up and had more flavor, I would have been more open to eating them. I still have to dress up my vegetables in order to eat them.
A couple nights ago, I made chicken over kale. I’ve been creating a love for kale lately. I went a little overboard on the greens, but my mom would have been proud.
I massaged the kale in garlic olive oil and let it sit for an hour. I seasoned the kale with garlic and herb and baked it in the oven at 350 degrees until the kale was crisp.
In a small mixing bowl, I combined 2 tbsps of peach jelly, 1 tbsp hot sauce, 1/2 tbsp of brown sugar, and 1 tsp garlic and herb seasoning together. I topped a 5 oz chicken breast with the mixture and baked it in the oven at 350 degrees for about 18 minutes.
I had some leftover lettuce and peas that I needed to get rid of, so I mixed them with a vinaigrette for a side.
Since I was on a green kick, I added steamed broccoli with parmesan and mozzarella to the meal.

That chicken sounds delicious! My favorite vegetables are snow peas and green beans. I like them raw the best, but I like to saute the snow peas with garlic, and I steam my green beans, putting a garlic clove into the water, and then drizzling lemon juice on top when its done. 🙂
I don’t know that it’s my favourite, but the most versatile for me is zuchini/courgette.
I grate it to mix with mince for burritos (either use tortillas, or wrap with spinach or another kind of green for low-carb/GF) – both to get an extra serve of veggies in my diet and to extend the meat mixture, I mix it with coconut flour and pecorino and egg to make a kind of muffin/bread, i grill it with capsicum/peppers and serve it with protein, a slice it thinly and use it in place of spaghetti, i cut it into strips and use it in place of pasta for lasagne….
So many uses!
