I know what you’re thinking…chicken in my eggs? But, Hey! It comes from the same animal, right? Its actually really good and it’s a great way to boost that morning protein.
The scramble was made up of 3 eggs, 2 oz leftover chicken breast, and 1/4 cup of Mexican cheese. I was running low on vegetables in the refrigerator. Otherwise I would have loaded it with peppers, onions, tomatoes, avocado, and more!
I paired it with a mini whole wheat bagel with cream cheese and banana!
Oh…and obviously with coffee:)
Chicken and eggs is a way overlooked combo! A local restaurant here does breakfast tacos with eggs, shredded chicken and homemade pico and they are to die for! I just haven’t thought to do it at home yet. Looks good!
