Today couldn’t have been anymore perfect (well except some things…but I’ll get to that later) The weather was flawless. Samantha headed over around noon and we decided to go on a long walk before hitting the pool. We went up and down hills for 5.5 miles.
This is what I was talking about…
My sunscreen had failed me on my walk. The pool didn’t help either. Lucky it’s not as bad as my sunburn I had last year…I don’t even want to show a picture of that sunburn. It’s incredibly scary and I’ll admit…I was a complete idiot for mistaking the bottle of sun tan OIL for sunscreen. I was in the middle of the ocean for six hours on a boat. I never want to feel that again. Luckily this one is just a pre summer burn and will be back to normal tomorrow.
After going to the pool, we got cleaned up and headed over to the grocery store to pick up some healthy ingredients for dinner. We are motivated to eat healthy and walk everyday now that the weather is nice and we have no excuses!
We decided to do a large salad, bourbon chicken and steamed bourbon broccoli! We’ve been all about the bourbon this weekend!

I have a huge organic bag of frozen broccoli in the freezer. Whenever I want broccoli, I throw it in a pan with water and let it cook. I then drain it and cook it up in a frying pan with cooking spray and a tbsp of bourbon seasoning. It’s fast and super tasty!
This is my ideal healthy dinner! Tomorrow, we are going to make a bourbon tilapia with sweet sesame green beans after our walk!
After dinner, we were going to watch a movie but decided to just go for a walk. We had so much energy and didn’t want to sit around on the couch. We went 8 miles while dodging kids on skateboards, barking dogs, sprinklers, and bugs! Tomorrow, we are going to fit in another 6 mile walk before dinner! It’s so nice to have a walking buddy! The time goes by fast when you’re chatting away!

I learned about your blog this past weekend while I sat next to your parents at Courtside. Your mom talked and talked about you, she is beyond proud. I reminded her that I knew you when I had my Jewelry Shop on the North Side. You and your friend would come in a lot and I remember that pink purse you had with the HUGE zipper pull:) Bet you do too lol!! I just wanted to say congratulations on all of your success and I will be watching and reading. I loved your story, I never knew any of those terrible things were happening to you. Just noticed the way you cook your broccoli, just a quick tip: the best way to cook vegetables is to either steam them or zap them in the microwave. This is to ensure that you lose the least amount of vitamins and minerals in the cooking process!

This was wonderful and too easy! A friend kept raving about her Bourbon Chicken so I looked and found it here. Used OJ instead of apple juice as that is what I had and it worked perfectly. Also added some cornstarch to the sauce as other reviewers and my friend suggested. Mixed the sauce ingredients in a bowl while the chicken cooked. My husband loved this over rice.
