Oven Roasted Squash & A Ground Turkey Meat Sauce

I’m all for simple, quick, and inexpensive meals. Sometimes it’s fun to go all out and cook something more complex, but not every night. Healthy can be quick and easy, too. Last night’s dinner was fabulous and only took about 30 minutes to prepare. It was filling and budget-friendly.

All you need is…
*Cooking Spray, *1 Medium Zucchini, *1 Medium Summer Squash,*2 Cups Garden Vegetable Muir Glen Organic Pasta Sauce
*2 Tablespoons Parmesan Cheese, & *1/2 Cup Ground Turkey Meat.

Preheat Oven to 375-400 Degrees.

Slice zucchini and summer squash into thick strips and place them onto a baking sheet greased with cooking spray.

Spray the top of the vegetables lightly with cooking spray.

After 10 minutes, flip the squash over and bake for another 8 minutes.

Place cooked squash onto a serving plate.

You can chop them into little pieces to make them easier to eat. I ended up cutting the squash into pieces.

While the squash is in the oven, prepare the sauce.

Cook up the ground turkey with a little cooking spray in a frying pan.

After the turkey is done, add the spaghetti sauce to the pan and let it simmer on low heat.

(I made extra sauce 1 pound of ground turkey & 4 cups of sauce)

*If you are vegan or vegetarian, you can use the meatless crumbles instead of the ground turkey.

Top the squash with a serving of sauce.

Add the parmesan to the top of the dish & serve!

I had a Caesar side salad for the side dish.

340 Calories, 35 g Carbs, 5 g Fat, 35 g Protein, 10 g Fiber

& don’t forget dessert!

  3. You should total try boiling broccoli slaw 🙂 I use it as a pasta substitute all the time. Just boil water pour the broccoli slaw in and in about 3-5 minutes it will be cooked. Add any sauce .. I’ve done cheese sauce, alfredo, red sauce … the meat sauce would be awesome too! Love your blog Taralynn I check it every day!

    1/ How do you have time to prepare all your meals and go to the grocery store? I try to prepare as much as I can but with my activities and school it’s hard to find time for that
