It was healthy taco night at my place for dinner yesterday. You can’t go wrong with tacos. They always hit the spot. Tacos can get pretty heavy, so I like to lighten them up. It doesn’t take away from the flavors either.
Sweet potatoes go well with tacos. I decided to make little slices to go into the taco. It’s an incredible topping that you have to try!
I seasoned the slices with garlic and herb and olive oil. I baked them in the oven at 350 degrees for 20 minutes.
I diced up two small onions and two large green bell peppers to go into the taco meat. This is a huge money saver. The onions and peppers add more to the meat mixture leaving tons leftover. I sauteed them in olive oil on high heat until they were fully cooked.
While the vegetables were sauteing, I cooked up the pound of ground turkey with 1 tbsp of olive oil.
Once the turkey was completely cooked, I added one packet of taco seasoning. I used Whole Foods 365 brand of seasoning. Rachel Ray has a great taco mix recipe, too.
I mixed the meat and sauteed vegetables together.
I placed the cooked vegetables and meat in a separate bowl.
I always serve tacos with a taco platter. My mom always did this when we were kids. You can add any taco toppings you like. On my platter, I had sweet potatoes, plain Greek yogurt, diced tomatoes with chilies, cheese, lettuce, avocados, and tortillas.
Again, the sweet potatoes on top of the tacos were my favorite part of the meal!
You can either use a lettuce wrap to eat the tacos or a tortilla. I shoved everything in a lettuce wrap and then wrapped it in a tortilla. My lettuce shell kept falling apart.
I added in salsa, avocado, cheese, sweet potatoes, meat, and Greek yogurt!
They make great leftovers, too! I had one for a snack this afternoon!:) Food is always better the next day.

i had a few worries about this because i thought there was no way i could eat tacos without a shell, but i did! I made these tacos tonight and they were fantastic! Love this recipe!!
