I love having salads for lunch. They are filling and keep me energized for hours. Salads are a great way to use up all the leftover vegetables in the house before they go bad. I make at least five salads very week. Here is one I made for lunch a couple days ago.
1 large zucchini steamed and seasoned with garlic and parsley powder, 3 cups salad greens, 3 egg whites, 1 egg yolk, onion slices, croutons, green onion, and lite Annie’s organic poppy seed dressing!
