Being cozy is my favorite thing to do at home. I’m obsessed with warm lighting, candles, and fuzzy blankets. Baking is also something that I like to do. It’s therapeutic and a huge hobby of mine.
A couple nights ago, I warmed up the apartment and whipped up some meringue cookies to go with late night movie watching. They are super simple and a light protein packed snack. Some would call it dessert.
Ingredients *5 Egg Whites, *2 Packets Stevia or Drops,*1 Tsp Cream of Tartar, *1 Tsp Vanilla Bean Paste or *1/2 Tsp. Vanilla extract, *1 Tbsp Pudding Mix. I chose pistachio Almond.
Preheat oven to 250 degrees.
With an electric mixer, whip all ingredients until fluffy.
Spoon mixture onto a sheet of parchment paper over a baking sheet. You can get fancy and pipe them, but these were going to be eaten up and served to no one but myself 😉
Bake for 30 minutes at 250 degrees.
Turn heat to 200 degrees and bake for an additional 20 minutes.
Shut off oven and let the cookies sit in their for 30 more minutes.
