One of the best dishes on the Thanksgiving table…loaded potatoes! The creamy, cheesy, and garlic-y goodness! Although they are completely full of fat, fat, and more fat! They are still hard to say no to. That is why I decided to create a lighter version so I can enjoy my favorite dish without damaging my health and fitness progress! And if you lighten up all your favorite dishes and sides, you can make room for some of the unhealthier dishes…like my mom’s pie, Cindy’s twinkie cake, or my aunt Rosanne’s pumpkin bars!
Ingredients: *Seven Large Russet Potatoes (peeled & boiled), *1 Head Cauliflower (steamed) , *2 Slices Turkey Bacon or Vegetarian Bacon, *1/4 Cup Diced Fresh Chives, *1/4 Cup Green Onion, *2 Cups GoVeggie Sharp Cheddar Cheese, *1 Cup Vegetable Broth or Chicken Broth, *8 Ounces Plain Greek Yogurt, *Salt & Pepper to Taste, *1 Tbsp Minced Garlic, *3 Tbsp Unsalted Butter or 3 Tbsp Olive Oil.
In a stand mixer, mix together all the ingredients except 1 cup of cheese, 2 tbsp of green onion, and bacon.
Place the potatoes in a baking dish and top with cheese, bacon, and green onion! Bake at 350 degrees until cheese is completely melted!
