Lately my dinners have been pretty boring, repetitive, and quick fixes. It’s hard to cook a fancy meal when it’s just for yourself. Yesterday the weather was ridiculously cold which helped me decide on soup for dinner. Instead of taking the time to make homemade soup, I just bought a can of Amy’s low sodium vegetable soup.
To make it more filling and chunky, I added a large steamed zucchini, black beans, and a couple of my own seasonings On the side two slices of flax loaf topped with avocado and walnuts.
