I have been on a hummus kick lately. I put it in salads, on sandwiches, and eat it with vegetables. When I was in high school I worked at a bagel shop. People used to order bagels with hummus. I found that disgusting, but that was before I even knew what hummus was. It just sounded gross. Now, I’m obsessed and roasted red pepper is my favorite. It’s super healthy too! It has healthy fats, fiber, and protein.
This snack is perfect for packing on road trips. I don’t recommend it for the beach. Sand stuck to the hummus…not good. All you have to do is toast (optional) a couple slices of bread, spread hummus over the toast, and top with your choice of vegetable slices! It doesn’t get much easier than that!
