Edamame & Black Bean Salad

Last night for dinner, I was tired with a side of lazy. I worked out earlier in the day. I did kickboxing class followed by ab sculpting. I like ab classes after a high cardio class because it’s relaxing. The pain doesn’t feel good, but you get to lay down the entire time.

I went to Whole Foods after the gym and picked up some groceries.

-Plain Unsalted Rice Cakes
-Whipped Topping
-Avocados
-Unsweetened Applesauce
-Baby Spinach
-Pistachios
-Mint
-Vanilla Extract
-Almond Extract
-Edamame Salad
-Black Bean Salad

I am making avocado pistachio muffins and a protein shamrock shake! Look out for those recipes.

I took some of the groceries I bought and built up a tasty salad for dinner. I topped mixed greens with: two tbsp black bean salad, two tbsp edamame salad, 1/4 cup cottage cheese, a rice cake and a hard boiled egg.

I also had a bowl of minestrone soup with my salad.

The salad was full of flavor. I loved how fast it was to make. I never thought about buying beans and pre-made salads to add more texture and flavor. I’ll have to keep this in mind next time I am at the store.

Because I was so lazy, I ended up crawling back into bed with my meal and hiding under my heated blanket for the rest of the night!
