Good Morning, Everyone!
What a great week it has been. Kyle and I originally had plans to go to Ashville this weekend, but when we saw 80% chance of rain, we decided to stay home instead. Thankfully, we had gorgeous weather in Charlotte! I got a lot of stuff done around the house and started playing around with my new video camera. After I hit “publish” on this post, I’m heading over to edit the “vlogging” version of today’s recap post. I filmed so much, and I can’t wait to put it all together and start practicing my video/vlogging skills. I’ll make sure to share the link to the video once it’s done!
The cable and power are currently out with the storm passing through right now, so I’m hoping I can get this recap typed before my computer dies, and I’m hoping the power comes back before it’s time to publish. Although, I don’t mind the quiet house. The sounds from the storm are pretty relaxing, and thankfully, I made a cappuccino before the power went out. I’d say it’s a pretty cozy morning to write a recap blog. I like to think of storms as a gift from God with the reminder to slow down and ground yourself for a while.

After finishing up my recap post and a couple of other important tasks on Monday, I headed out for a two-hour bike ride at the Riverwalk. The weather was too perfect outside to just stay inside, or go to the gym. I needed to be out in it.
Monday’s breakfast consisted of sweet potatoes, kale chicken sausage, 1 egg + 4 egg white omelet, and taco-inspired hummus. I also traded in my black coffee for a creamy cappuccino made with Dharkan Nespresso pods and New Barn barista-style almond milk.
I stopped to pick up some lemons and cucumber for a green juice on my way home from the grocery store and grabbed this bag of Field Trip cracked pepper turkey jerky near the checkout line. I was so hungry after the bike ride and needed a protein snack for the ride home. It was really good, and less expensive compared to other brands.
I got so lucky on Monday because as soon as I got home, it started to storm badly. I’ve been caught in the rain on a bike ride before, and it’s not pretty. I was craving this green juice the entire time I was out riding. I was so excited to break out the juicer and enjoy this refreshing combo! I love going to juice bars, but I feel like they can never make them the way I like. They are either too sweet or too bitter. I call this the “Goldilocks green juice” because it’s “just right.” It’s sweet, spicy, and has the right amount of savory.
Goldilocks Green Juice has 2 large cucumbers, 2 lemons (with zest), 1 lime, 4 inches + of ginger, 3 celery sticks, 1 small Honeycrisp apples, 3 cups kale, 2 cups spinach, and one medium grapefruit. Sometimes, I’ll add in a couple of carrots instead of the grapefruit. When I’m done, I’ll pour in 1/2 cup ice-cold water through the juicer to pick up any extra juice/flavor. I’ll usually run the water through with the ginger.
Later in the evening, I had a delicious salad while watching The Bachelorette.
I tossed purple kale and arugula with Primal Kitchen Honey Mustard Vinaigrette (still my favorite right now) and topped the salad with grilled chicken, blackberries, cashews, and fresh avocado slices.
I decided to do some deep cleaning downstairs on Tuesday morning after I finished up some blog work. When I do deep cleaning, I literally empty out closets and reorganize them, steam clean the rugs and couch, mop the floors and floorboards, take everything out of the fridge and power clean the kitchen, declutter, and keep going until there isn’t a piece of dust on anything. I get into these cleaning moods and just go all in. Cleaning is so therapeutic to me, and when I’m feeling restless, it’s the best thing for me to do.
Before I cleaned the kitchen, I made delicious lemon & blackberry protein muffins with the farm-fresh blackberries I had in the fridge. They turned out so tasty. They’re gluten & dairy free, and you can find the recipe here!
For breakfast, I had a protein smoothie with one scoop of Orgain vanilla bean plant-protein powder, almond milk, matcha powder, one banana, and 1/2 teaspoon of nutmeg.
I had a late lunch before hopping back on the computer to finish up some work. I had an omelet with avocado, hummus, and chicken sausage. I also had one of my blackberry muffins (not pictured.)
When Kyle got home from work, I put my gym clothes on, and we headed to work out together. I ended up doing 45-minutes on the elliptical while listening to a Southern Charm podcast.
When I got home, I showered, made a protein smoothie for dinner, and headed to bed because I was tired! I’ll usually watch T.V. before dozing off.
I was up bright and early to walk the dogs on Wednesday morning. I felt so well-rested. I made a cappuccino and then sat down to do some recipe blogging.
For breakfast, I made a delicious super smoothie!
It had one frozen banana, one cup frozen blackberries, one tablespoon ground ginger, 1 teaspoon ground turmeric, one and a half cups of unsweetened vanilla almond milk, two scoops Orgain vanilla bean plant-protein powder, one teaspoon spirulina, one teaspoon camu powder, and topped with creamy organic creamy peanut butter and chia seeds!
For lunch, I had eggs scrambled with rice and sweet potatoes, hummus, avocados, and cashews. I love making random combos like this because they always turn out so delicious. I was so excited for my Thrive Market box to come on Wednesday! I don’t know why it took me so long to jump on the Thrive Market bandwagon, but it’s amazing. You can buy superfoods, healthy baking ingredients, your favorite products, and more at inexpensive prices. It’s like the Amazon of Whole Foods. When you sign up, you get 25% off your first order, and 20% off the next three orders! I love that they have my favorite protein powder, other superfoods I add to my smoothies, and other baking goods that I use frequently. The Thrive Market brand also has some great snacks, and it’s fun way to learn about new products on the market.

On Wednesday night, I headed to the gym with Kyle for another date with the elliptical. I did 40-minutes at an incline while listening to another podcast. After showering off and getting ready for bed, Kyle and I watched another episode of Sharp Objects. The show is so good, but dark. It’s helping us fill the Handmaids hole since we’ll have to probably wait another year for more episodes.
After walking the dogs and working in the morning, I made a vegetable omelet and had an arugula salad on the side. I did step by step photos for the omelet for an upcoming blog. I find it funny that I get asked how I make my omelets a lot! So, why not a post designated to one? 😉
Around noon, I had a blackberry lemon protein muffin and delicious shake for lunch.
My shake had one tablespoon ground ginger, one teaspoon spirulina, one teaspoon matcha powder, two scoops Orgain vanilla bean plant-protein powder, unsweetened cashew milk, frozen peaches, and ice.
I did a little meal prep after coming back from visiting my dad in the afternoon.
I prepared ingredients so I could have taco salads/scrambles for a few days! That’ll also be in an upcoming post 😃
Kyle and I took the boys for a long dog walk on Thursday night, and just relaxed. I watched the Southern Charm reunion show part one before bed. No shame in my reality show obsession.
I was up at 6 am on Friday morning. I made a quick little shake with cashew milk, frozen blackberries, and one scoop of Orgain vanilla bean plant-protein powder before Kyle and I walked the dogs. We usually do about a mile and a half in the morning before he goes into work. Sometimes I’ll beat him to it if I’m too impatient for my morning coffee.
For breakfast, I had a scramble with bell peppers, onions, tomatoes, cashews, and avocados on the side. I’ve been adding cashews to my eggs lately, and it’s such a game changer. It adds a salty crunch, and I love it! The best thing I’ve had all week was the Sriracha cashews from Thrive Market. They were so good that we ate them in a day! They would be great on a salad or egg scramble.
For lunch, I had one cup of unsweetened SoDelicious coconut milk yogurt with chocolate Orgain fudge brownie protein powder, Vanilla Cinnamon Grain Free Granola, and cashews on top! Yum! This is a great low-sugar, high-protein, and low-carb way to treat your sweet tooth.
For dinner, I had a taco salad filled with ground turkey taco meat, white beans, bell peppers, onions, guacamole, shredded lettuce, and salsa. I ended up eating like five cups of shredded lettuce, and I was stuffed! Big salads are my favorite 😊
Kyle and I headed to the tennis courts to play with my parents on Friday night. I was still stuffed from dinner, so I thought tennis would be a good way to de-bloat. Note to self *don’t eat so much lettuce…bleh
We played for a good two hours! I put a little video together and linked it below 😀 🎾 I’ve had so many people ask if I could do a video from our little tennis matches.
We were just playing for fun with my parents. I’ll try to sneak video of my Saturday matches with the group next time 😂 (videoing strangers make me feel like a creep.)
I woke up bright and early on Saturday morning because I was so excited to see Becca’s new house! She just moved a week ago, and I’m so happy for her. After walking the dogs, I had a piece of toast with jam from the farmers market and then had a cup of coffee before heading allllll the way out to the countryside. I’m sad that Becca and I now live 50-minutes away from each other, but we still plan on seeing each other as much as we can. We were talking about the days when we were literally ten minutes from one another, and it makes me sad 😔
The upside of her move? Exploring new areas!
After falling in love with Becca’s new house and getting the tour, we headed to the Farmer’s market.
We were both so hungry around 11, so we decided to stop in the Stone Table for breakfast. We were walking around Monroe’s downtown and saw how cute it looked. I don’t know why I haven’t heard of this place before, but I think I’ve found a new favorite gem outside of Charlotte.
I can’t wait to show you the video footage of this place! It was exactly what we were looking for 😊 They had healthy farm-fresh food, pressed juices, french press coffee, and a super healthy menu. The place was adorable inside, rustic, open, and tons of seating.
The staff was so friendly and helpful 😊 I ordered a velvet juice and it was filled with ginger! It even had beets (i hate beets) but tasted really good! I ordered the EVOO sandwich with extra kale instead of the bread. The eggs were cooked to perfection, the avocados and kale were so fresh, and I had to stop myself from ordering the same meal to go! I loved this place, and I can’t wait to take Kyle here. And the coffee? HEAVEN. Becca ordered the cheddar housemade chicken sausage sandwich and said it was amazing. I just want to go back like NOW!
If you’re looking for a cute little town to explore, head to Monroe. It’s quiet, but they have a lot of great local businesses to enjoy!

I decided to pick up some fresh donuts from Your Mom’s Donuts! Never a bad idea to keep frozen donuts in your house 😃

Hello, birthday sprinkles!

We grabbed the chocolate glazed donuts, glazed stuffed cookie dough donut, and birthday sprinkles!
I got home around 2 pm and had a slice of bread with guacamole before heading to the mall with Kyle. I spent an hour and a half just walking around trying on dresses with no intention of buying anything while he was getting a couple custom suits designed for work (he fancy….) I did buy a t-shirt for $10 at Jcrew because I loved the color. I really don’t need more t-shirts 😂
We stopped at Whole Foods on the way home to pick up some groceries for Kyle’s meal prep, and to keep a few of our other favorites in the house.
For dinner, I had romaine lettuce with chicken salad on top, roasted vegetables, white beans, guacamole, broccoli salad, and meat from Whole Food’s hot bar.
After dinner, we headed up the road to take our boys for a walk at the lake park near my house. It was a gorgeous night! I haven’t been able to complain too much about the southern heat this year. Maybe I’m just becoming immune to it all.
I’ve been thinking about getting a kayak. If any of you have recommendations on which one to get, let me know! This lake is so close to my house, and it would be a blast to come out here in the mornings and kayak.
When we got back, Kyle asked if I could make him more of the chocolate hazelnut protein balls, so I quickly whipped some up. It takes like ten minutes to make these! They really are so good. I’ll have the video of the process up with my recap vlog 😊
After the Sunday morning dog walk, I made a delicious breakfast. I had one egg + three egg whites with leftover taco turkey, chicken salad, guacamole, and sauteed veggies, and beans.
We were heading to my parent’s house later in the morning to hang out with them and celebrate Grumple’s 7th birthday so I decided to whip up a doggy birthday cake. I just grabbed three dog-friendly ingredients that I thought would work, and it turns out that it did! I couldn’t believe I pulled this off! We actually tried it too, and it was good. The tutorial will also be in my upcoming video! (UPDATE! IT’S BELOW 😃 )t’s so much cheaper to make your dogs a cake than buy them at the store! Plus, it’s better to know what’s going into them.

The boys are always happy when they’re at their grandparent’s house.
We ended up playing bags and drinking Kombucha in the backyard. This Good Ol’ Ginger Lenny Boy is my FAVE!!
We got home around two. I made a rice cake with creamy peanut butter, banana slices, and had a cappuccino on the side. I was SO tired and needed my afternoon pick-me-up.
I didn’t plan on going to the gym Sunday afternoon, but when Kyle mentioned it, I thought it would be a good idea. Working out gives me a boost of energy, and I needed something in order for me to keep going the rest of the day.
I didn’t go into the gym with a plan, but I ended up doing a great treadmill workout!
Walk 1 minute (5+ incline)
Jog 1 minutes (3 incline)
Spring 30 seconds (2 incline)
Jog 2 minutes (no incline)
And repeated this for four miles. Sometimes I’d sprint longer when I was feeling it, or jog longer. If I’m going to be on a treadmill, I need to do intervals, or I get bored. This made the time fly by! When I got home, I made a protein shake before jumping in the shower. It had two scoops of Orgain vanilla bean plant-protein powder, half cup of frozen tropical fruit, and one cup of unsweetened almond milk.
After showering off, I helped Kyle knock out his meal prep for the week. He also grilled up some chicken for us for dinner.
I had sugar snap peas sauteed in sesame oil, grilled chicken with Organic Girl Herb Goddess dressing, purple kale tossed in Primal Kitchen Honey Mustard Vinaigrette, and then topped with guacamole, tomatoes, beans, and onions.
After dinner, Kyle and I took the boys for a walk, and then I headed upstairs to watch Shark Week and work on my recap post before falling asleep.

Looks like you had a super fun week! I always order online from Amazon, I’m a die hard Prime fan. I love the convenience of it when I’m working long hours and don’t want to make special stops for speciality items after work. If I had a pet I would definitely celebrate their birthday! Unfortunately our apartment has a no pets policy =[. Two kayak recommendations: Perception, and Old Town. They aren’t the cheapest on the market, but they last so long, have comfortable seats, and come in cool colors. I’ve had my Perception for over 10 years and it’s still in amazing condition. It’s been over countless river rocks, small rapids and sand bars and is still going strong! If a store near you ever has a demo day I definitely recommend going and trying out different lengths and styles to find what feels most comfortable. I like my 7 foot kayak because I can load and unload it myself but I know a lot of people prefer a longer one!

I’d also recommend Perception kayaks! We’ve had our Perception Sparky models for a good 15 years and they’re still in great shape. This model is perfect for lake paddling and very stable in the water, so it’s forgiving if you’re learning (it’s what I learned in, and it’s still my favourite to paddle today). We have the shorter 7m version like Megan and it’s great because I can unload it myself. We also have an Old Town canoe that has stood the test of time, though I’ve never tried their kayaks.
Your idea of morning paddling sounds so lovely — AND morning paddles are amazing for wildlife photography, in case you needed another reason to get one!

I just realized I totally goofed on my kayak size, I have a 9 foot, not a 7 foot haha. Are you looking into roof racks at all or would you haul it around in the back of your car (or whatever you drive haha ) If you’re looking into a roof rack, Yakima racks are great and they have rollers so it’s easier to get it onto your car.

I LOVE Thrive Market and I also order from Chewy for pet supplies. They have good prices and it beats going to various stores for the same stuff.

Nooooot really. My one cat’s birthday is my birthday (as far as we know anyway) and our other just turned 15! I feel like every day is a celebration for her now that she’s made it this far (she still acts like a kitten and is feeling fine). They’re pretty spoiled as is, so a birthday would be just another day in the life 🙂

This kind of goes along with the idea of your omelet post — but out of curiosity, what do you do with the extra egg yolks?
I struggle with buying things online because I don’t want to deal with a hassle of returning something if it’s not what I wanted… (And I’m pretty sure I love instant gratification!) But when I do need something that I can’t find anywhere else, Amazon is my go-to.
Maybe a behind-the-scenes look of your set-up & photos of your recipe development for a VLOG? I’m always curious as to how that works.
I don’t really celebrate my Charlie’s birthday – he was a humane society cat, so it’s hard to actually “know” it. But I do have him celebrate the major holidays with us — for Easter, Thanksgiving, and Christmas he usually gets some additional wet food (that he loves!) and a new toy. When your pets are like your children, that’s just what you do, right? 🙂

I considered getting a kayak myself but then I thought how big and heavy they can be. 9 times out of 10 I’d be loading it on and off my car solo. I knew it would be a challenge. I think ocean kayaks are open face and potentially lighter? Best advice is to shop in person to get an idea of weight.
Ultimately, I decided against a kayak and found a new love for paddle boarding and decided to purchase that instead. They are easier for me to lift, carry. Again, shop in person where you can get an idea on length, weight. Etc.

I love ordering from Chewy! I always get my stuff the next day even with standard shipping and they send me a hand written Christmas card each year! Amazon has been my other go-to over the years, but they’ve been slipping lately–2-day Prime shipping takes 4-5 days and they’ve increased the membership fee! Chewy is AHHHMazing! My pup takes join supplements daily and they are $20 cheaper on Chewy than they are at any vet’s office. His food is $10 cheaper as well; plus free delivery! So I save $30 a month plus it gets delivered to my door in 1-2 days and I don’t have to go to the vet’s office and the pet store plus lug around 30lb food bags! I tell everyone to look into Chewy.com! They also mail me handwritten post cards to say “thanks”.

The place I order from the most is probably amazon prime. Its getting absurd where I will order stuff like paper towels just to save a trip to the store when life gets busy. For kayaks I would say look into inflatable ones. The two I have are very heavy duty (you can go over rocks and rapids and be fine) but they are super easy to travel and store since they fold up nicely. LOVE Grumples b day pictures

My steamer isn’t giant, it’s more like an “area” steamer, so it’s not as strong! The rug is pretty thick so I usually just spot treat it and then go over it with the carpet shampooer.

I would love to know more about the deck and patio furniture you and your dad built! We just bought our first house in February of this year and it has a tinsy tiny screened in patio. We hope to knock down the walls and expand the patio with decking, and would love to know more about how you guys DIY’ed it!

Oh my gosh.. so much goodness in one post!!! Where do I even start?! Oh I know, how about Grumples Birthday celebration.. I died. Thats the cutest thing EVER.
