Good morning & happy Monday!
I just finished walking the dogs, and now I’m sitting down with my coffee to blog before heading to yoga in a couple of hours. I spent last night watching American Idol and getting all the photos ready for this blog because I love getting my recap posts out on Monday mornings.
I’m so excited for this week. I’m heading out on an annual hiking trip with Becca tomorrow morning, and I’ve been waiting for this day to come since the last time we trotted up the mountain. (trip 1) (trip 2) I have a lot of work to get done after yoga this morning, so let’s get to the recap post! I hope you’ve had breakfast because there are a ton of good eats in this one sure to make you hungry.
The regular Monday morning yoga instructor wasn’t there, so luckily, the class was more laid back. Not that I wasn’t up for the challenge, but I was just so tired.
When I got home, I made a delicious smoothie bowl before diving into my workload. My smoothie bowl had frozen blackberries, frozen peaches, cashew milk, protein powder, ice, topped with pumpkin seeds, sunflower seeds, and raisins.
Later in the afternoon, I filmed a little dumbbell routine that’ll be out soon!
I spent some time stretching. I ran a couple of miles before yoga, and I feel like my legs have been so tight. I think I need to start drinking more water.
I had a tasty garden salad with my current favorite dressing for lunch, the Herb Goddess from Organic Girl. It’s so good! My salad had spinach leaves, cucumber, tomatoes, carrots, sprouts, apples, cabbage, avocado, and unsweetened dried cranberries.
After my evening three-mile dog walk (the boys could go forever), I made a quick dinner. I had a slice of Udi’s bread with a Gardein chipotle black bean burger and mixed greens with Herb Goddess dressing. I raved about these black bean burgers in my last recap post, and I’m still just as obsessed with them. I had a side of mango sriracha to mix into my salad and dip my sandwich in.
After dinner, I made a decaf oat milk (only) cappuccino and sat outside on the driveway with Grumples. He loves to sit outside and watch people while I read my bible or talk on the phone. Sometimes after our walks, he’ll sit a the end of the driveway and refuse to come inside because he loves it out there. But he doesn’t want to be alone; he wants someone to sit with him at all times. He’s a funny dog.
And can we take a second to appreciate my latte art?
On Tuesday morning, I started filming the taste test for the Daily Harvest video. I couldn’t get the whole thing done because I had to pick up my mom from work and take her to a follow-up appointment to get her stitched removed from her surgery. My dad could have taken her, but I really wanted an excuse to have lunch at Living Kitchen!
After her appointment, we headed to Living Kitchen for lunch. This is one of my favorite trendy spots in Charlotte. It’s a raw vegan restaurant with delicious food! The last time I had eaten here was when my brother was in town over the summer.
We decided to treat ourselves to a coconut milk latte and a grey hulk smoothie. I love that they split smoothies for you if you ask. The “Grey Hulk” smoothie had mixed berries, banana, spirulina, maca, hemp protein, and hemp milk.
I always bounce back between the arugula harvest salad and the fire and brimstone burger. The fire and a brimstone burger is a gluten-free quinoa-millet veggie burger spiced with chipotle sunflower seed hummus, onion, cucumber, guacamole, and fire and brimstone hot sauce. For my side, I always get the broccoli Waldorf salad. It’s so good! If you’re ever in Charlotte, add this place to your list.
We stopped in Anthropologie after lunch, and I picked up a ton of bedroom inspiration. I still haven’t decorated my bedroom since moving into my new home a year and a half ago. The Southend location is the best Anthropologie I’ve ever been in.
After dropping my mom back off at work, I took the backroads home because all of the flowers were blooming in the neighborhoods, and I had to snap some photos.
I should have warned you earlier, but there is an abundance of spring flower photos in this post!
On Tuesday afternoon, my dad came over to fix my drywall (from the DIY fail…)
I finished up some of my work, walked the dogs, and then had leftovers for dinner! I had some spinach with herb goddess dressing and roasted sweet potato slices aside.
On Wednesday morning, I had a smoothie bowl (same ingredients as Monday’s.) I shared the “how-to” on my YouTube video.
I took the boys out for a four-mile walk. This is the best time to catch up on podcasts and clear my head. The time flies by, and my long walks are like therapy sessions. The dogs were out cold the rest of the afternoon!
I had a mixed green salad with herb goddess dressing, sweet potatoes, a chipotle black bean burger, mango sriracha hummus, and guacamole for dinner.
Around seven, I headed to Kyle’s. We usually don’t hang out on weeknights, but I missed him, and sometimes ending the night with a good movie and our pups are the key to turning around a blah day.
We woke up early to walk the dogs around the Fourth Ward on Thursday morning. It was cold out but still a pretty stroll. It’s been abnormally chilly here lately. The high today is only 53, and that is cold for the south.
Don’t get too excited; this is not a mason jar full of guacamole! Haha. I had like six messages on Instagram of people thinking this was guacamole. I do LOVE guacamole, but I don’t think I’d like to drink it. My breakfast smoothie had frozen banana, kale, pears, mango, zucchini, wheatgrass, matcha powder, cashew milk, pea protein, and topped with sunflower and pumpkin seeds.
I would go to yoga on Thursday, but I wasn’t feeling too well, to be honest. My endo was in full swing, and I didn’t feel like going anywhere. The first three days of my cycle are the worst. I try to eat a ton of vegetables, healthy fats, and lay off any sugar, and limit my caffeine intake during those days.
For lunch, I had a slice of Udi’s toast with homemade guacamole on top. I guess after all the guacamole speculation; I started craving it. 🙂 I also had a glass of Healthcare. cayenne cleanse kombucha. Did you know that cayenne is a herbal pain reliever? I swell up like a balloon during my cycle, and I read that cayenne can help with the inflammation. I mean, I’ll try anything at this point.
I had a ton of vegetables in my fridge that I needed to do something with before they went bad. I froze half of them and then grilled up the other half. I love grilling batches of vegetables and adding them to omelets, salads, soups, or eating them as sides all week long.
I feel like the grill adds so much flavor that all you need is a little oil. I hardly ever season my grilled veggies.
I placed the carrots on the top rack because they were going to take the longest to cook. I started with the bell peppers and onions on the bottom rack first. I used avocado oil because it has a higher smoke point and can hold up better with the grill’s heat.
And many of you were quick to point out my grill’s face! Lol, shall we name her?
Once the peppers and onions were finished, I wrapped them up in the tin foil and then added the zucchini and summer squash to the bottom rack while the carrots continued to roast. I cooked them for seven minutes on each side.
The asparagus and snow peas cook super fast, so I saved them for last.
I sliced the carrots and added all the vegetables to a large bowl to store in the fridge. Having vegetables already prepared is a great way to help me eat them.
I spent the rest of the afternoon outside working on the patio. It was 60-degrees, and the sunshine felt so good. I have to take advantage of these days because it’ll be 100 degrees and humid next month.
After my nightly dog walks, I made a chipotle black bean burger and had a side of grilled vegetables for dinner.

After blogging, cleaning, and getting ready for the evening, I headed uptown to Kyle’s. We had dinner plans with friends. While he got his haircut, I took a walk around the Fourth Ward to take photos of the beautiful flowers in the neighborhood. It was a bit overcast but still gorgeous. I’m sharing some of those photos with you below! If you’re ever in Charlotte, you should make visiting the Fourth Ward neighborhood a must. The beautiful historic homes and character will leave you in awe.

It’s crazy that all of this beautiful character is in the city, and many people don’t even know it’s there.
A little stroll before dinner!
We went to another one of our favorite spots in Charlotte, Poplar Street Cafe. It’s located in the Fourth Ward, and not a lot of people know about it. We sat outside on the patio listening to live music and enjoying some food. The performer was super talented. He sounded just like Randy Newman.
We started with their hummus plate. Their homemade hummus is delicious and kind of tastes like grits. Is that weird? It was served with fresh vegetables and pita bread.
For my dinner, I ordered an arugula salad with walnuts and smoked salmon on top. I had balsamic and olive oil for the dressing.
We had a great Friday night!
I did all my grocery shopping on Saturday morning. It rained all day long, so it was the perfect day to do some meal prepping.
I had a bowl of protein yogurt before cooking. My bowl had unsweetened coconut milk yogurt, chocolate protein powder, and chocolate lover superfood blend. I decided to try out a new protein powder this time and went with VegiDay. It’s a raw, vegan, and organic plant-based protein powder made up of peas, brown rice, pumpkin, quinoa, chia, spirulina, and chlorella. It was super inexpensive, and I really loved the taste. I bought it in chocolate and vanilla.
I helped Kyle do his meal prep. (his meal prep details are on this post for those of you who were asking me)
I also made another batch of chili to eat throughout the weekend and week. I used my Turkey & Carrot White Bean Chili recipe without the zucchini and sweet potatoes instead of carrots. It was delicious!
I had a bowl of it for dinner with Daiya cheese, avocado slices, and a kale salad on the side.
I had dinner around 4 pm, so after finishing up the rest of the meal prep, I had a decaf oat milk(only) latte and a little slice of the Daiya strawberry cheesecake. It’s SOOOOOOOOOOOO good! I mentioned how good their key lime was in my last recap post, but this one was just as good! It’s hard to believe that it’s vegan and made without actual cream cheese.
About four hours later, I had a bowl of fresh fruit and dipped it in vanilla protein yogurt (vanilla protein powder and coconut milk yogurt.) This combo tastes just like store-bought fruit dip.
I headed out for a long dog walk on Saturday morning and then did a big power clean (bathrooms, appliances, cabinets, windows, floors.) When I get into cleaning mode, there is no stopping me. Leo hates when the vacuum comes out.
I had a bowl of chili for lunch, and it was delicious! Why is chili always better the next day?
The day was filled with more dog walks, Fixer Upper episodes, and catching up on blog work. I love a calm Sunday.
For dinner, I had a “smorgasbord” plate. It had sweet potato slices, my chili, avocado slices with herb goddess dressing, and my grilled vegetables.

Weekly goals, get moving and exercising, I had my 3rd baby 6 months ago and need to get moving again. Also, start planning meals better and meal prepping for our lunches. My husband takes his lunch everyday and we eat at home so I need to get a variety going when there are not enough leftovers. Overall my week goals are getting organized and eating better than we already do! Trying to slow down life a little and really enjoy everything we have going on!

Ah I am so jealous of all the spring flowers! It’s currently snowing in Pittsburgh… but, I just checked the weather and it’s supposedly going to be 82 degrees on Friday. I don’t know how that’s possible lol. I dream of moving to NC someday.
To turn around a bad day, there are a few things I like to do. I’ll listen to podcasts, take a bath, journal or talk it out with someone, and if all else fails, I take a nap 🙂
One goal I have for this is week is to read more. I have a long list of books to read and I’ve been slacking on reading. It’s one of my favorite ways to end the day.

I think the best thing you can do is turn your phone on airplane mode, get a really good podcast or album and go for a walk with some hot tea!!! It works like a charm for me! I was having a bad day on Wednesday (mainly period hormones making me cry over everything) and I had a walk and tea at Kyles. My day was turned around asap.

Those sweet potatoes that you prepped for Kyle look delicious. They reminded me of ratatouille at first glance. If I’m having a bad day, I try to go for a walk/run and listen to a favorite book on audible or sometimes I’ll go to the movies. We have a local cinema that has cheap tickets before 6pm. My only goal this week is to get through work, bring my lunches and try and figure out a birthday gift for my husband whose b-day is rapidly approaching this Saturday. Mine is Sunday so I know we’ll be eating out all weekend. I can’t think of any traditions that I really have with friends besides Freindsgiving.

I am so ready for those crazy hot days though– I love walking before or after dinner with my fiance, and the warmer weather is perfect for that!
We love Living Kitchen out in Raleigh and Chapel Hill; I almost always get the collard wrap ‘burrito’. I just can’t get enough greens!!
Whenever I’m having a bad day, I’ll usually try to go for a slow run/jog to get some endorphins going. Even if it’s just a walk for a few miles, it gets my circulation going and can usually make me feel better. My main goal for this week is to submit forms– the boring stuff– for our wedding! Once I have that done, I can focus on the more ‘fun’ stuff 🙂

To turn around a bad day I usually sit down with my journal, devotional, and bible or take a car ride and blast music with all the windows down. It just depends on what mood I'm in.
My one goal for the week is to stop stressing about all the things I have to get done and focus more on the present. I get so caught up in planning the rest of the week, month, year, rest of my life (lol) that I forget to be grateful for the day I am already living.

I do the car rides with my dogs and listen to music when I’m having a bad day as well! Funny to know other people like doing the car rides. Something about driving out in the country side with the wind blowing through the car.
I think we all do that as well, and it’s important to just be in the moment and be grateful for what we have. People have it so much worse and it’s crazy how we stress over the smallest things that mean nothing!
Becca is amazing and I’m so happy we get to hang out! Life has been so crazy lately that we barely see each other!

If I’m having a bad day I always have a cuddle puddle with Ben and Bella (our cat). Honestly, it completely resets me and reminds me of how stupid lucky I am for all the good things in my life. We don’t have enough time to be unhappy!
My bestest and I always go to Zeds Dead in the summer at Red Rocks. It’s an outdoor concert and it’s absolutely epic every time! Regardless of any other shows throughout the summer, that’s the one we ALWAYS make it to together.
Goals this week is to be on point with my veggie game! My momma and I are headed off to Vegas on Friday where I KNOW I will be eating allllllll the foods, so I’m eating super duper clean until then. This post definitely gave me the veggies feels!

Just being around him instantly cheers me up and he tends to give extra hugs and kisses when I need them 🙂 I sadly don’t have any annual traditions with friends, but I love the idea! We may be starting one this year with some friends. They go to something called Brew at the Zoo which is a wine and beer festival at the Baltimore Zoo with music, food, and of course animals! That’s tricky because it’s all about your lifestyle and the location of your husband’s job.
Southend is growing so fast and close enough to uptown, it’s great for breweries, food, shopping, and public transportation.
Southpark/Dilworth is still closer to uptown but it’s more family-oriented and pretty $$$ but I love that area! It has great restaurants, walking paths, shopping, and it’s not too crowded.
Plaza Midwood/NoDa is pretty hip! I sometimes forget it’s even in Charlotte. Lots of breweries, up and coming housing, restaurants, yoga studios, and music/art life.
Ballantyne – super far from uptown, but family-oriented with lots of things to do.
I think it’s best to take a drive around Charlotte and get a feel for each neighborhood!

Wow your spring photos of charlotte are amazing!! It’s currently autumn here in New Zealand and we just got our first snow fall. To turn a bad day around I usually take a long walk in the forest with my dog to clear my mind. A annual tradition my friends and I have is to head to the beach house and just chill and catch up (also there is no internet connection or phone coverage) we try to go 3-4 times a year. My goal for this week is to complete clean week, its 100% clean eating and twice a day workouts for 7 days. I am trying to get myself ready for winter as I don’t want to fall behind with my weight loss with the colder months approaching, like I did last year. I feel your pain with the endo, I hope it’s eased for you. To help ease mine I take hot baths with epsom salt’s, also drink water and raspberry leaf tea like there is no tomorrow. 1-What do you do to turn around a bad day? Probably see or speak to my boyfriend, write a chapter of one of my ongoing novels if I’m inspired, or walk a lot, especially if it’s anxiety.
2- Do you have any annual traditions with friends? Not really… my best friend and I have our birthdays with one day of difference so we normally go to have dinner together with our bfs, but that’s all hehe.
3- What is one goal you have for the week? Go to work by foot everyday, as I have been recently doing (it’s 2.2 miles) and also get up every couple of hours to go down and up the stairs here in my office lol (there are 8 floors).

Another great post Taralynn! I love reading your post they are simple but exciting and never boring! I feel like you share just enough with your readers ❤️! The photos around Charlotte are amazing and you always make me want tos too wht I’m doing and take a trip to see and try all the fun places you share.
My main goal this week is to stick to my cleaning schedule that I made up. It’s a big goal broken down into smaller daily goals. With my two year old running around it’s hard to keep the house clean for more than 5 minutes but I am going to focus more on decluttering and deep cleaning this week. Wish me luck!!

Reading your post also always makes me want to start my blog. I’ve read your post on starting one but still am not sure where to start or what to write. If I did start one it would be about my daily life as a mom and house wife. More for a diary or way to just let out my thought and photos. Being a stay at home mom doesn’t give you a lot of adult interaction so it would be a nice outlet. Maybe one day soon idk but thanks for the inspiration!!

I think decluttering is the best way to help keep a house clean! Less is the best. (now I need to take my own advice with my closet.)
You should totally do it 🙂 Just start with one post and let it lead to another. Take some photos throughout your day, puzzle them together, and go for it!

The food from Live Eats looks delish and I totally agree that chili is better the next day. I feel ya on the endo bloat. I’ve had great luck with a glutamine anti-inflammation powder that I was prescribed by my integrative doctor. It’s the only thing that’s helped my cramps.
I’m so happening to be finishing my period tomorrow.

To turn a bad day around I like to read, take a nap, or listen to music. Or. Listen to music while reading until I fall asleep 😉 Cuddling with my hubby and getting outside and playing with my family helps too.
My goal for this week is to finish prepping the garden beds so that I can start planting this week and next. 😬 I’m so nervous!

When I have the time, I’m going to revamp my Charlotte section. If I were you, I’d stay at the Duke Mansion! It’s a dream of mine and I am going to stay there soon hopefully! Airbnbs and hotels are all over uptown as well! 😀
