I wasn’t sure what to make for breakfast this morning and I had a lot of groceries to use up. I only had one egg, half an avocado, a piece of turkey bacon and one english muffin left. That was the perfect amount for a good ole breakfast sandwich. Breakfast sandwiches are my favorite because they’re filling, easy to make, and perfect for any time of the day.

My breakfast sandwich had: 1 egg, pepper, low cal cream cheese, whole grain muffin, 2 oz roast beef, slice of avocado, and one slice of turkey bacon. I would usually add cheese but I didn’t have any in the house.
I fried up the egg in olive oil and black pepper. While the egg was cooking, I toasted the english muffin. When the english muffin was toasted, I added the cream cheese, roast beef, and avocado.
I cooked the turkey bacon in the microwave because it’s the quickest. I added the egg and turkey bacon to the top!
This breakfast sandwich came to 350 calories which is great for breakfast if you pair it with some fresh fruit!
Now I’m going to go out and have an awesome run!

hi taralynn I love breakfast sandwiches and make them all the time! Can I ask how do you get your turkey bacon so crispy looking? Mine usually ends up limp and not how I like it. Tia!

I eat breakfast sandwiches a lot as well. When I’m working I have to get up at 5am (I’m a nurse) so I need something quick. I’ve actually been cooking my eggs in the microwave. It’s almost as tasty as cooking it on the stove. Just spray the bowl, cracked the egg, make sure to poke the yolk or it will explode, cover with a paper towel and cook for 1 min. Place on a toasted whole wheat English muffin with a slice of cheese. IT takes 2 minutes. This is not for everyone, but when we don’t have a lot of time, sometimes we have to improvise.
