Healthy Homemade Granola Clusters!

Another rainy Monday calls for cuddling up on the couch and blogging! I have so many post in my recipe vault that I need to get to. Today I’m sharing my healthy homemade granola clusters for all you nut lovers, healthy nuts, and nutty people!

Nut clusters make the perfect gift. They are delicious an also healthy. Giving someone a healthy treat is pretty thoughtful and caring.

These were given to Courtney (Team Taralynn Captain). She’s a huge health nut and one incredible runner. She just finished a marathon on Sunday. Not her first, second, or third….

She’s pretty inspiring and she has agreed to do an article about her running on my blog.

Ingredients: *1 Tbsp Vanilla Bean Paste, *1/2 Tsp Cinnamon, *1/4 Cup Honey, *1/2 Cup Semi-Sweet Chocolate Chips, *3 Cups of Fruit, Seed, & Nut Trail Mix, *1/3 Cup Organic Peanut Butter, *2 1/4 Cup Quick Oats, *3 Tbsp Chia Seeds, *2 Packets Stevia (Optional) *3 Tbsp Flax Seed, and *1/2 Tbsps Coconut Oil

You can use your favorite trail mix or white chocolate chips instead of milk. Get creative an go with your own taste buds. If you don’t like chocolate, you can used chopped fruit, too!

Preheat oven to 350 degrees.

In a large mixing bowl, combine the dry ingredients including the trail mix.

Add the chocolate chips last unless you want them to melt.

In a separate mixing bowl, combine the melted coconut oil, honey, peanut butter, and vanilla.

Mix well.

If the coconut oil does that melt the peanut butter, microwave for 10-20 seconds and continue to stir.

Add the wet ingredients to the dry ingredients.

Mix for about 2-3 minutes until oats are completely coated.

Take a taste test and make sure the flavors are perfect! Some people like more cinnamon, more honey, or Stevia! It may be just right!

Let the mixture cool for 3-4 minutes.

After the oats have cooled, stir in the chocolate chips. No one will judge if you mix in a little extra!

Grease a baking pan with cooking spray.

Pour the oats into a pan.

Spread out with your spatula. The mixture will need to be padded down with your spatula.

Put it in the oven for 30-32 minutes.

Take the oats out and place in the refrigerator overnight.

If the edges are brown, you’ll know they are done!

I woke up at six am this morning to pull these out an put them into a container.

You can keep them in a bar form if you’d like! I just enjoy the idea of crumbling the clusters on top of yogurt!

Once all the bars are out of the pan, crumble them back into the pan.

You can give the clusters and additional 10 minutes in the oven if you’d like. I usually do this! But it’s not necessary if you do not have time. It just gives them an extra crunch.

I put the crumbles in a container to store.

This mixture is perfect for a pre workout or breakfast.

I need to come up with all kinds of flavors for this granola! Maybe one for every season as gifts! 🙂 I’m thinking toasted egg nog crunch next?
