Sweet Kale Salad with Honey Orange Vinaigrette

Ingredients
  

Kale Salad
  • 4 Large Pan seared chicken breast, sliced
  • 6 ounces Stemless organic kale
  • 6 ounces Crunchy loose leaf lettuce
  • 5 Cups Cold cooked pasta
  • 1 Cup Cherry Tomatoes, sliced
  • 2 Large Avocados, sliced
  • 1 Cup Crumbled goat cheese
  • 1/2 Cup Dried cranberries
  • 1/2 Cup Candied pecans & walnuts
Honey Orange Dressing
  • 1/4 cup olive oil
  • 3 tablespoons fresh orange juice
  • 1 tablespoon Honey
  • Salt, Black pepper & Garlic powder to taste

Instructions
 

  • Cook and slice the chicken breast and allow it to cool slightly.
  • Add the kale, lettuce, cooked pasta, cherry tomatoes, avocado, goat cheese, dried cranberries, candied nuts, and chicken to a large salad bowl.
  • In a small bowl or jar, whisk together the olive oil, orange juice, honey, salt, pepper, and garlic powder until combined. Pour the dressing over the salad and toss well until evenly coated.
    Serve immediately or refrigerate until ready to enjoy.
