No-Bake Lemon & Chia Energy Protein Balls

Ingredients
  

  • 1 Cup Coconut Flour
  • 1 Cup Cashew Butter
  • 1/4 Cup Chia Seeds
  • 1/4 Cup Lemon Juice (or extract) (plus zest)
  • 1/2 Cup Vanilla Plant-Based Protein Powder
  • 1/4 Cup Cashew Milk +more if needed (or your choice of milk)
  • 3 Tbsp Agave or Honey

Instructions
 

  • In a large bowl, mix together the cashew butter, chia seeds, lemon juice, vanilla protein powder, cashew milk, and agave. 
    Gradually add more milk to form the perfect "cookie dough" texture. 
  • Roll into 3-tablespoon sized balls, and place them onto a sheet of wax paper. 
  • Melt your white chocolate. 
  • Dip the bottom side of the energy balls into the white chocolate and place it back onto the wax paper to dry. 
    **You'll want to do this with a spoon so the balls do not break from the warm chocolate. 
  • Top with lemon zest, and allow the chocolate to harden for about 20 minutes.
