No-Bake Lemon & Chia Energy Protein Balls

Ingredients

  • 1 Cup Coconut Flour
  • 1 Cup Cashew Butter
  • 1/4 Cup Chia Seeds
  • 1/4 Cup Lemon Juice (or extract) (plus zest)
  • 1/2 Cup Vanilla Plant-Based Protein Powder
  • 1/4 Cup Cashew Milk +more if needed (or your choice of milk)
  • 3 Tbsp Agave or Honey

Instructions

  1. In a large bowl, mix together the cashew butter, chia seeds, lemon juice, vanilla protein powder, cashew milk, and agave. 

    Gradually add more milk to form the perfect "cookie dough" texture. 

  2. Roll into 3-tablespoon sized balls, and place them onto a sheet of wax paper. 

  3. Melt your white chocolate. 

  4. Dip the bottom side of the energy balls into the white chocolate and place it back onto the wax paper to dry. 

    **You'll want to do this with a spoon so the balls do not break from the warm chocolate. 

  5. Top with lemon zest, and allow the chocolate to harden for about 20 minutes.
